Chef Cameron Lee Dunlap Will Open a Restaurant Dedicated to Foraged and Wild Foods | Eater Portland

"Set to open in mid-October in the intimate dining room that used to house Verdigris at 1315 NE Fremont, Morchella will focus on foraged and wild foods with an emphasis on vegetation over game; its name comes from the genus of morels. Dunlap plans to emulate survival foraging by building meals around mushrooms, roots, sea beans, berries, and weed-like greens—often with only one piece of meat per dish—and will source meat from local purveyor Nicky USA, leaning toward wild game like freshwater fish, quail, venison, and pheasant and practicing whole-animal butchery (for example, a goose breast alongside dirty wild rice with confit goose leg cooked with goose broth). The starting menu will include three or four entrees, three or four smaller plates, and desserts that use foraged ingredients such as marshmallows made from mallow root and chicory-root components that add a burnt-coffee, caramel flavor; a multi-course tasting menu will be offered around $60. Cocktails will often incorporate kitchen ingredients (shrubs from fermented plums, wild-berry juices), wines will celebrate local natural producers with emphasis on winemakers of color, and service will run Tuesday through Saturday evenings. Dunlap also intends to make the restaurant an equitable workplace by abolishing the back/front house distinction, cross-training cooks as servers, sharing tips across the staff, targeting wages around $30 an hour after tips, providing 30-minute breaks on eight-hour shifts, and having the team open and close each night." - Alex Frane

Chef’s kiss! I’ve already eaten here a few times and can’t get enough. This place is cozy and delightful and the food is delicious. It is the perfect blend of classic diner food and elevated flavors. EVERYTHING is from scratch from the chili sauce, to the ketchup and even the pickled asparagus in the bloody mary’s! The GOAT sandwich is the best. Fancy French toast is the bomb and the tartines are divine. Cocktails are done to perfection. You won’t be disappointed!

A nice addition to a strip of restaurants and bars on Northeast Fremont, with service that is very friendly and attentive. I really, really want this place to be a solid five stars, but so far the food is hit or miss. I hope that evolves over time, though. The hits: Vegetable hash has been great every time, savory with eggs, potatoes, seasonal veggies and delicious romesco sauce. Breakfast grilled cheese is a unique sweet breakfast sandwich- sort of french toast, sort of grilled cheese with egg, sort of a cheese danish, and very yummy. The french toast is good and the biscuits are buttery and filling. The misses: The G.O.A.T. didn't live up to its name, unfortunately. It was surprisingly bland for a menu item that listed such flavorful ingredients- basically an egg sandwich with the barest sprinkling of condiments. And Huevos Rancheros is usually one of my favorite breakfasts, but when I ordered it the beans were undercooked, and the tortillas were overly crispy and dry, so that none of the flavors really blended. As for drinks, I have yet to try any of their cocktails but my dining companions love them. The coffee is excellent and they have tasty fresh fruit juice.

Great meal tonight at Milo’s! Two of us had the steak frites—cooked perfectly and absolutely delicious. The third plate was their house salad, which was fresh and generously portioned. We also tried the homemade lemonade, and it was super tasty! Highly recommend this spot. Hope they can keep the crowds coming—Milo’s deserves it!

Fat Milo's on Fremont is the answer to my prayers. Fantastic food, great portion sizes, excellent family-run service and a location that serves the neighborhood well. The turkey club was perfect -- quality thick cut bacon, generous amount of cold cuts and crunchy sourdough to cap it off. On my second visit I took advantage of their all day breakfast and enjoyed a chicken-fried steak -- another solid selection with tasty gravy and a heaping serving of jojos to help soak it all up. Portland is a city starved for diners, thank you Milo's for bringing high-quality New American Diner food our inner northeast neighborhoods. Can't wait to go back!
