"This "taste laboratory" led by one of the Netherlands' best chefs has an exceptional experience in store for diners. It all starts with the vibrant, hip location: a converted train tunnel! The curing hams you see hanging add to the Spanish-style ambiance. There is nothing stiff about this place — it's all about feasting on surprising flavours in a casual atmosphere. François Geurds is on a quest to find new ideas, try things out and make discoveries. For example, he will play with sweet and savoury flavours until he finds the right balance. The flavours and textures that turn up on your plate at FG Food Labs are intriguing. Chef Geurds's dishes have solid French foundations and he draws on aspects of Spanish and Japanese culinary traditions, pushing the boundaries in an effort to get the best out of his ingredients. For example, his gently steamed halibut forms a beautiful alliance here with hearty ossenworst (Dutch ox sausage), an intensely flavoursome raw garlic froth and a deep shellfish bisque. FOOD:Meh SERVICE: really, really bad We tried the lunch menu. I got the pork okonomiyaki. We walked inside restaurant at around 12:40. It wasn’t busy. I got served with the drinks very shortly, 12:48 to be exact. However, we waited for the server to get our order. And we waited a bit more. Some people who came later than us already got their orders taken. But we waited a bit more. The table beside us got a second glass of drink. The other table got more wine. And we waited. After more than 30 minutes I raised my hand to get her attention to finally ask if we can order. By this time, we were really hungry already. New guests sat beside the table beside us. For some reason, they got served their order already. The server came by our table twice to clarify what was it that we ordered. We wanted to cancel the order since it was just taking too long, she kept saying that it’s coming…. That they’re just adding the final touches. At exactly 13:31, I got served the okonomiyaki. At best it was meh. It tastes more like a fritata. Was this street food? Nope. First of all, street food is fast, and just tastes good without trying to look fancy. Oh, and it is definitely value for money. The complete opposite of our food and our experience. To top it off, when the award winning chef casually asks if we like it, and we said in a low key way that it was okay and that we waited almost an hour for this. He got defensive and almost rude. And he said he can prove on the cctv camera that we are lying and that we weren’t there for an hour. Crazy. Why would we even lie about this… On our way out, when I showed him the time stamp from my phone/post, he got livid and wouldn’t even let us say our piece. We are paying customers chef…. Not your staff. And even then still… Respect. Common courtesy please. Nevertheless we behaved in a very decent manner despite our experience. We were already a couple of meters away from the restaurant and he even had to run outside to add some more expletives to what he had already said. Basically just repeating himself. That if we wanted fast, we should have gone to McDonald’s. We weren’t really that demanding. I mean we waited patiently. He can also see that in that cctv while he’s at it. Bottom line. Not worth it. Not worth coming back to. There are so many other better restaurants to spend our money on. If the chef was having a bad day, they shouldn’t take it out on the customers.

I've been here a couple in the past 3-4 years, some of the food was exactly the same on the different visits, not much of a food LAB in that respect, everything was indeed tasty and although expensive not as much compared to FG nextdoor, from personal experience they're both the next restaurant but at the 2 star you pay for show and slightly fancier ingredients. Through the open kitchen i could see every single staff member was different, even the chef was a different person so that's always a red flag. Good food but for a star restaurant very lacking,

I came here solo without a reservation on a whim. Luckily they were able to take me. I was told by the hostess that it’s a 6 or 8 course option. The website even said the same. But when I sat down I was told it was an 8 course option only. I questioned the server but she insisted it’s only 8 with no explanation.. I was even more confused when the table next to me was offered both options. Again I questioned the server and I was told because I didn’t make a reservation it’s only 8 with no explanation. Why? I was annoyed because I knew 8 would be too much food. Service continued to be rough. Bread and three different kinds of butter were put on my table with no explanation. So I had to ask when the chef happened to walk by and asked if I was doing ok. Service started to pick up and was great from there. The food was very good and very creative but would say my biggest complaint was almost every dish arrived with a sauce that drowned the food. I love sauces but does nearly every dish have to be swimming in one? At the 2 hour mark, after telling them I needed to be somewhere, food was still coming. I was just feeling very overwhelmed with 8 courses! Stuffed. I couldn’t even finish the final savory course. Overall it was a nice meal but slightly missed the mark for me for a Michelin starred restaurant compared to experiences I’ve had at other starred restaurants.

I tried the FG Ramen with pork and the creaminess of the broth was exceptional. Also the noodles. I did miss a bit more of salt and the egg was too soft for my taste (even the egg white was undercooked), but overall a great lunch experience.

The tasting menu of 8 dishes was really a little more than my wife and I could comfortably eat, we did our best though. Everything beautifully presented, and good wine pairings too. The only dish I didn't love was the white chocolate ravioli filled with foiegras and topped with a spoonful of caviar and olive oil. Sadly the oil pushed it over the edge into just to much. Service of friendly and well informed, seeing is tastefully decorated with really nice chairs.

I was here with my husband for Mother’s Day 2019. Having been to many Michelin starred places since I have to say this one is my favorite. Not only was the food and wine delicious and inventive, it was also really fun. We were there for over four hours , never a dull moment. Also the bartender was great.

Absolutely amazing food!! This "little brother" of the 2* FG restaurant neighbouring it definitely earns its own spot. The more experimental dishes such as the in gin marinated salmon are really special. Paired with some excellent wines, the 7 courses we had were all designed and made to perfection. Two of the courses were desserts which was maybe a bit too much, but that may be personal preference. The staff was super friendly, and although they were super professional and polite there was a very relaxed and pleasant atmosphere. Sitting at "chef's table" with a beautiful view into the kitchen was also a unique experience. It was amazing to see with how much care they composed all the dishes. In conclusion definitely worth the visit for some special occasions!
