Ok, I am a steak snob and was skeptical about this place (as I am with all) when a coworker recommended it to me. But, I'll always try it once. Prices were on par with Australian/American Wagyu (but isn't actually Wagyu beef AFAIK), so the prices made me even more doubtful. I took home two ribeyes after carefully sifting through the cuts to find the ones with the marbling and fat caps that appealed to me. I also tried a New York a couple of weeks later.
So, the verdict... Astonishingly this is the best beef I've ever purchased from a store myself, and consequently the best steak I've ever had as a home cooked meal. I was just in disbelief at how rich they were, how easily the fat melted, and just the flavor of the beef. Could not believe it. I don't know how... but this was notably better than any Prime/Dry-Aged Prime or American and Australian Wagyu I've had at home (and I've cooked hundreds). With every bite, I literally sat there like, "WTF did I just eat?" (in a good way). Could not believe it.
I trimmed a bit of the fat cap off each steak, saved it, and have used the fat to make awesome fried rice, sauteed vegetables, and hash fries.
Unfortunately, I can't afford to make every steak I eat a Filhart steak, but I will never buy meat anywhere else when I want to give myself and my family/guests the best steak experience at home.
