"The knödel (bread-based dumplings) and South Tyrolean wine at Fink’s transport you straight to the mountains of northeastern Italy. Doused in melted butter and plenty of Parmesan (as they should be), the dumplings come in classic forms — made with beetroot, cheese, speck, or spinach — as well as more experimental variations such as chard and walnuts.
