"Hubert Keller seems to have dropped off slightly from the limelight after spending a good amount of time in the aughts on TV and the celebrity chef circuit. The affable French chef (and DJ) still maintains a Burger Bar in SF and Vegas, but Fleur inside Mandalay Bay is sort of his last full service place. The menu doesn’t necessarily inspire passion anymore, mostly because anything involving global flavors and small plates is a dime a dozen at this point. But the quality is still very much there, especially at brunch, which features a well-constructed Kobe-Angus blend beef burger (the man does know burgers), and a hangover-curing sampler of brunch classics that includes a short rib Benedict, pancakes, and an omelet. For those without a hangover, pick from a better-than-average selection of craft brews like Sierra Nevada Hazy Lil’ Thing IPA or Firestone Walker Pivo Pils.
