This is hands down the best bakery I have ever come across in my life. I have trouble digesting a lot of wheat products and never have any issues with the breads from this bakery. I tried the ham and cheese coissant today for the first time and will be going back for more tomorrow. Their English muffins and bagels are the best I’ve ever had as well. The staff is always friendly when I visit.

I drove 40 minutes and braved the line for a sourdough boulangerie, and boy, was it worth it! The perfectly layered and beautifully crafted croissant. Flaky, buttery, Sublime! Warm sourdough chocolate chip cookie. With the perfect amount of sweetness nailed it! Tonight, sourdough sandwich, here I come! This place has earned a repeat customer.

I have purchased from here on occasion several times and enjoyed the bread and pastries as well as the pizza in the summer time. However, this establishment is horrible to its customers, I learned for my first pre-order. We made a preorder for our family Christmas Eve gathering to pick up today and they did not do it. They did not inform us, they did not provide replacements at their expense, they did not provide explanation but blamed us when we went to pick up at the agreed time. Awful customer service and a horribly rude worker.

Finally got my hands on some highly coveted baked goods from FWSB! With the high popularity (order ahead is crucial) holiday season hours shifting around (odd hours anyway) it took two visits to make this happen. End result: very good, especially the almond croissant (pictured) that was an absolute piece of artwork. Size of each piece was also very impressive. The only thing holding this review back was the relatively high price and relative inconvenience. Very curious to try their breads on a future visit. UPDATE: After trying the sour dough and brioche, have to admit that FWSB is 💯

Pizza was delicious! We got the Diavola pizza and it was the perfect size for 2 people to split. It took less than 10 minutes for them to make. Restaurant is on the top floor of a food hall with plenty of seating in the building. Would definitely come back and have again!

Great selection if you get there early! Everything is amazing from their sourdough bread to bagels. Was impressed with the cream cheeses they have too! So good. Worth the $$

We came on the Christmas Eve. There was a huge line but the wait wasn’t too bad since most people are just picking up their pre-orders. We didn’t place pre-orders but were still able to buy most of their signature baked goods ( sour-dough bread, croissant, turnover). They handed out free cookies for people in the line which was very nice. Really loved their croissant and turnover. Very crispy layers and the fillings tasted very fresh, natural and not sugary at all. The sourdough bread was very soft and fluffy inside. Highly recommend you to place a pre-order ahead of time if you are looking for specifics.

It was our first time here and even though they had run out of the items we had ordered online (we placed the order rather late), the woman behind the counter was super sweet and so helpful. We truly grateful to be able try the chocolate croissant and sesame bagels with the scallion schmear - everything was absolutely delicious. Honestly some of the best bagels I've ever tried. Will absolutely be back whenever we're back in the area and definitely recommend giving them a try... just make sure to go or place an order early!

"I got a little girl, got a baker shop She got muffins for sons, she got cornbread too Sweet rolls and jelly, boys I'm tellin' you Yes, the baker shop boogie" (Willie Nix) We very much enjoyed our visit to Flour Water Salt Bread. There's loaves of bread and gorgeous pastries and grab and go pizzas and bagels and muffins everywhere. But the main reason we enjoyed our visit was Robert, whose friendly demeanor and funny personality really won us over. We ordered three pastries - a Banana Bread Tart, a Ham and Cheese Crioissant, and a Pain Au Chocolate (Croissant). Because we arrived shortly before their 1:00 closing, Robert generously tossed a Bombolini (an Italian doughnut) into our bag. So how were they? Banana Bread Cake - A+ Price $6.95 Absolutely delicious! Fresh and sticky with chunks of chocolate and banana flavor. The best of our goodies. Ham and Cheese Croissant - A Price $7.50 This huge flaky pastry was excellent with plenty of buttery layers and sprinkled baked cheese on top. The only thing that could have made it better would have been a teense more of that yummy ham filling. Chocolate Croissant - A Price $6.25 Same excellent flaky and buttery layers and generous size. But like the ham and cheese croissant, we thought a teense more of those yummy chocolate ribbons would have put it over the top. Bombolini - A Price - complimentary Imagine the delicate buttery taste of the best jelly donut you ever had, but without the jelly. Their Bombolinis are baked in filled and non-filled versions, but I gotta tell you, the unfilled version was fantastic! Thank you, Flour Water Salt Bread and Robert, for a wonderful customer experience.

I can't find the Greenwich location on Yelp so know this review is NOT for the Darien shop. In Gwich, one step in the store fills your nostrils with the smell of fish because the bakery shares its location with Fjord Fisheries. Look at the bakery selection on your right and the smell quickly dissipates. Influenced by French and Italian recipes, the offerings are mouthwatering, and I enjoyed the coffee cake, brioche with a delicious cinnamon swirl, with a well-made Americano. The barista was friendly and knowledgeable about the store and its goods. If I had a cooler in my car, I would have picked up some fish, too. A small counter area for sitting and some outdoors spots for cooler days. By 8:30 am, I'd expect the garbage can to not offer a history of yesterday's meals. An experiential demerit that drops the score to three stars for an otherwise lovely coffee/baked goods spot.

Probably the best sourdough my family has ever had. We come pretty regularly to purchase a loaf or 2, and sometimes I like to dabble in their other baked goods as well. Prices are not unreasonable, considering the quality of food you're getting. I think they also recently started serving pizza and a few other pantry staples and fun items.

Flour. Water. Salt. Bread. Ecstasy. This should be the unofficial title of the establishment from my experience. I've never really been a sourdough person, after all I'm not really a sour guy. Sure, I'll have it with my omelet at the diner and get the sourdough boule from TJ's because it seems like the chic thing to do, but I've never craved sourdough. That was until I was exposed to FWSB(E) this summer. Despite having many slam dunks of products, the sourdough loaf shines through for me. Thanks to my aunt's (she's technically my cousin but the age gaps are too severe to keep that up) overwhelming patronage of FWSB(E), I have averaged nearly a loaf a week. From soaking up the juice of a well-baked branzino to being a vessel for a juvenile peanut butter and jelly, the sourdough is truly a jack of all trades. Even when I am full beyond belief, I find myself subconsciously playing a slice in the toaster, eager to delight in its light crisp and robust flavor. The scintillating sight that greets you upon entry, however, is their plentiful array of sweet, bready delights. From sea salt cookies to kouign amann's to the biggest damn coffee cake you've ever seen in your life, they have a treat to make you feel sweet and special on any occasion. When my heart desires for everything but my wallet cries for forgiveness, I am often left with a difficult choice that leaves me defaulting for a cookie, choosing the safe option like a bachelorette with her final rose. However, FWSB(E) remedies this disappointing stalemate by providing free samples for thise who dare submit to sweet sweet desire. The bite sized arrays of pastries lining the case is a simple invitation for me to try a bit of everything, approximately tripling my pastry consumption to dollars spent ratio. I am still yet to try the glossy cardamom bun, but clearly I must be down bad for it if I am writing this review at 4am. Other honorable mentions are the croissants (more buttery than Burton Guster) and the wide selection of schmears (it's not cream cheese, it's schmear, iykyk). Overall, FWSB(E) ideally represents my vision of a pricey, but very much well worth it, local bakery. The aesthetic and interior match that of which I aim for in my future bakery, and the outdoor seating, complete with a *fountain*, provides a great place to unwind after spending half a paycheck on a diverse range of carbohydrates.

One word: Kouign-amann The sweet, indulgent cousin of the croissant that will change your life. And FWS does it perfectly. This small meticulous shop is a hidden gem in Darien. They often sell out so get there early and try everything. Ask them anything (from how it's made to how to store) and they know everything about baked goods. Just a heads up, this is not your average neighborhood bakery. The prices and limited selection speak to that. But do yourself a favor and try the Kouign!

This is a high end bakery that is definitely worth a visit. Arrive early in the am for the best selection of pastries and bread. This sourdough is right up there with the Bay Area and emerald city. The baked goods are impressionable and will make you yearn for more.

Bagels and croissants are good. However, poor customer service. Staff got my order wrong and when I returned to the store to let them know, the girl behind the counter slammed the bag into the trash and begrudgingly prepared the correct order. No apology or anything. The owners should hire better people.

This is such a cool local business! I have been wanting to try it out but I always miss the hours of operation window. I had a bombolini with caramel filling which was super delicious. The caramel was perfect and not overly sweet. We also tried the chocolate and regular croissants which were the perfect amount of crunchiness on the outside and softness on the inside. There's a really cool seating area outside with a water fountain feature which is super family and kid friendly. Customer service was prompt and excellent and I will definitely be coming back for some delicious pastries. I ate everything and forgot to take a picture

So this was my favorite bakery the year they opened. Every time I have gone back they have run out of just about everything by 11am. Usually the person ahead of me is buying out everything left! What I did get (regular croissants) were overcooked. The prices have also been raised INCREDIBLY high. Not sure if I'll return..but that sure won't matter to this place with the business it does!

Since when does flour water salt kneed little (not so little actually because theres a ton inside the cookies) bits of charred matter from the oven or God knows what into their cookies? Are they using the oven surface for the cookie batter and just not caring? Like why does it have so much black char pieces literally inside of the cookie... if I am going to be paying over five dollars for a cookie, I expect the cookie to not have any carcinogenic matter inside of it. That's not what high end places do. Something is obviously wrong in the way they're making the cookies. Eating burnt matter is harmful.

Really, really good bread! As fresh, rustic and tasty as it gets. Right here in Darien. Grab one of the smaller snacks, like a croissant or sweet bun, and eat it with a coffee right there in the delightful courtyard beside the fountain. Grab a baguette to take home. It's a perfect morning.

Honestly this place should be better than it is from what I've had. The donuts on the weekend are just ok. The breads are probably amazing- to be fair I have not tried them. The coffee cake is the standout for me- huge pieces of brioche bread with a crunchy flavorful brown sugar crumb that is truly memorable.

Absolutely love this bakery! We regularly visit on the weekend for pastry and grab some bread for the week, they have so many lovely options to choose from. Highly recommend the cinnamon bun, coffee cake and croissants. There is also lovely seating outside and a nice coffee shop next door, which pairs perfectly with their baked goods.

The sourdough bread is wonderful. Get that. Other items are so so. Take the palmiers for example. They are not palmiers. They are soft/soggy, dripping with sugar syrup and huge. Not light and crunchy and lightly sweet like they are supposed to be. The donuts which they call bombolini are hit or miss. Often the filling is too sweet and gloppy and overpowering. Stick to the simple ones - plain or vanilla cream. I took another point off because you can't contact this place. Guess they thought that would be a good idea for customers. Anyway, get the delicious sourdough bread!

What a gem of a place! Lovely staff and the most delicious sweet and savory treats. The brioche bread is phenomenal, also amazing is and potato garlic focaccia, and of course the croissants! It's one of those places where it doesn't matter what you get, it's all going to be perfection!

My earlier review stated "the best bread I had ever had - including bakeries across Europe." Sadly that is no longer the case. Since they moved their ovens out of Darien and into Stamford, the quality has suffered quite noticeably. And, the owner/manager was nasty to me on my most recent visit, and over the past couple of months, I have heard him being equally unpleasant to other customers. In my case, I had reserved a loaf of bread via Apple Pay only to be told "you are not in the system, what do you want me to do about it." I told him I had driven 20 minutes for the bread and he was completely unsympathetic and unwilling to offer a solution. When you have the best product around, perhaps customer service matters less; but this is not the case anymore. SONO Bakery is just up the road and their bread is delicious.

I've been here many times over this past year, and I'd give them a solid 4/5 after trying most of their items. They have quite the reputation, with long lines at times, so you just have to order online if possible (all updates are on their insta). Overall a very solid 4/5 because of the pretty high prices, yummy goods, and good service. Here is a recap of what I've tried; - Pizza: I've tried 4 different types of pizza - definitely enough food for 3 people, with a couple slices left over. Which is good, since these are not cheap! My favorite is the marg. The crust is very chewy and dough-h if that's what you like, with a slight tang from the sourdough. - Bombolinis: a newer addition to the roster. Easily the BEST thing they carry!! The vanilla and citrus flavors are the best, as the cream has more moisture than their other flavors (s'mores, Nutella, earl grey etc.). - egg sandwich: very good and filling! This is not always on the menu, but I love their buttery and flaky crossiant with the fluffy egg. - Various cookies: any cookie with chocolate and flaky salt is fine by me. These are definitely heartier and chewier - don't expect thing and crispy! Pretty good overall. - NY style coffee cake: HUGE. Very yummy warmed up with butter. A tad dry, but I've only gotten it once. - pain au chocolat: a good size! The sourdough flavor is really evident here FYI, which is why it is not my fav. But worth a try! - croissinamon roll: before the Bombolinis, THESE were my fav. Perfect amount of chew and sweetness. Highly recommend. - jambon gruyere roulade: the sourdough and savory fillings here compliment each mother very well. Another favorite.

I wish there wasn't a minimum length that a review needed to be because sometimes you can some it all up in one word. For FWSB it would be "Excellent." If I had so highlight a couple things it would be the "Spicy Boy" pizza and the lemon cromuffin.

I can't say enough good things about this place. They make the best sourdough bread I've ever had! They also make pizza here on Fridays, which I intend to try as soon as possible. I also order their ham and gruyere pinwheel here and they make the BEST coffee cake you will ever sink your teeth into, guaranteed. I happen to have a gluten sensitivity and decided to try the products here after reading few articles about how the process of fermenting the sourdough batter breaks down most of the gluten. I've personally not experienced any digestive issues with the food here, which I am elated to report, though it's important to mention this was my own decision and no one from the establishment has encouraged me to do so. So, if you are gluten intolerant or allergic like me, use your own discretion. It's worked out perfectly fine for me and I will be a returning customer and love purchasing food here to bring to friends and family too!

At FWSB, you can enjoy the pleasure of eating wonderful bread (several varieties) and pastries baked fresh throughout the day. The bakers at FWSB should be commended for their hard work adapting to Covid-19. They were under statewide restrictions and had to figure out a way to continue to supply the community with fresh bread. They have kept rolling out their pizza, giant chocolate chip cookies and a variety of sandwiches, salads, and other delicacies. The cost of their goods is extremely reasonable when you consider the size and quality of each item. The loaves of bread are large and two or three people can share their large pastries. The chocolate they use is the best I have ever tasted. The bakers are extremely nice and friendly, even under pressure. When you go to FWSB it is like visiting a fresh bread bakery in Paris or New York, baked by nice local people and at a much lower cost. My favorite is the Miche loaf - it is enough to share with friends and relatives and still have some to freeze for later.

The baguettes are awesome, croissants, jamon popover, coffee cake and cinnamon rolls. Can't wait to try more items!

Yummmmm is all I can say. I got the Chocolate croissant, the ham and cheese croissant and the twice baked breakfast sandwich which was egg, cheese, sausage and arugula. All were very good in my opinion, very buttery and pretty heavy, so you wouldn't be able to eat more then one at a time. I went with some friends and they got all sweet items, and said that they were very sour (like sourdough) which makes them different then a normal croissant, and they didn't prefer it. I gave 4 stars instead of 5 because I think the cost is high for what it is. It won't deter me from coming back here but can get pricey if you are trying to buy pastries for a group. (my 3 things I purchased were a total of $22).

I used to drive from Stamford to Redding, CT for the bread, and then Stamford to Norwalk. So excited to have them even closer now, in Darien! Excellent bakes on the sourdough and buttery croissants. Rob really loves what he does and it shows.

Not too much of a selection, but I loved the chocolate croissant! Just make sure if you're coming in it's to buy something, because if you're only looking to browse, it might be awkward if you just leave. I would love to try their bread sometime!

I'm always on the lookout for the best bread in the area. The sourdough here is phenomenal. Great hard crust and tender chewy on the inside. Also had the cinnamon rolls and chocolate chip cookie which were also noteworthy.

Pre ordering wasn't what I expected. Reserved a slot for 10 and the line was wrapped around the building. Not a pick up and go. Had to go back an hour and a half later to get my order. Coffee cake, not what I'm used to, it shouldn't be called a coffee cake when it is more like a croissant. Edges were burnt. Chocolate chip cookie was excellent. Bacon egg and cheese pizza is great. Overall thoughts: Is it good, yes. Is it worth the wait, no.

As a self-professed croissant connoisseur, I was so excited to discover the place. The croissants and other pastries were top-notched and in my opinion on par with many top bakeries in San Francisco, New York and overseas. The reason I didn't give it 5 stars is because the price - it's at least 30% higher than the bakeries with the same caliber. I will still visit the place occasionally but not for my weekly craving for laminated dough.

Come for the pasties, not the pizza. We went there Friday night for the pizza more than the cookies. Scheduled for 6pm pickup, got there 15 minutes early and we're told our order wasn't ready yet; not a problem. At 5:58pm, I saw the girl behind the counter take our pie from the bottom of a stack and bring it over to us. It had been ready before we arrived! Needless to say by the time we got home to eat it it was cold. I suppose it's not a problem if you're one of those psychos who likes cold pizza (you know who you are), but I'm not. The cookies and pastry was fantastic though, so they definitely have that figured out!

When I was growing up in New Haven, every Sunday after Mass, we used to go to a little bakery near Wooster Square. We'd pick up a loaf of bread fresh out of the oven. I didn't know how lucky I was. I just took it for granted. Flour Water Salt Bread took me back to those days. A finely crafted gourmet bread is not so far from the finely crafted peasant bread of my youth. Although God forgive me, this bread might be better. Darien, you don't know how lucky you are.

This is some of the best bread in area. The sour dough chocolate chip cookies are to die for! Def go here ( order in advance) it's ridiculously good

Their coffee cake is unbelievable. It's as though a cinnamon bun and a standard coffee cake had a baby, resulting in a delicious amalgam of streusel, brioche, and cinnamon swirl. Also really enjoyed their croissant, as it was unique in its sour dough-esque finish. Highly recommend!

If only the prices were more reasonable and the employees friendlier. I went in the other day and it appeared to be oone male in his 30's busy baking. Well he stopped what he was doing to assist me at the counter, but was not very welcoming. I bought 2 plain croissants and 2 apple turnovers $19+..... $4.00 per croissant and $5.00 per apple turnover? Any way, the croissants were excellent, light, crunchy & buttery. The turnovers were very good, but would be excellent with more apple filling.
