The Scoop: New Italian Inspiration At La Strada, Long-lost Heritage Dishes At Folklore, Fun Plates At Le Bon Funk And More

"Folklore marks its first anniversary with an updated menu that further plumbs the time-honoured family recipes of its Peranakan-Eurasian chef Damian D’Silva. D’Silva insists on using age-old, time-consuming techniques to yield deep and soulful flavours from his food, so he takes no shortcuts in recreating traditional dishes like Ikan Assam Surani ($30), a delicate baby threadfin smothered in a sweet and sour gravy. The recipe calls for precise slicing of garlic, shallots and chillies by hand into specific, consistent sizes so the nuances of the ingredients can be drawn out when cooked. Combing local wet markets, the chef seeks out forgotten ingredients like sukun, or breadfruit, to whip up the classic Malay dish of Sayur Lodeh ($16) with young jackfruit, beancurd and tempeh in a creamy curry. Other highlights from the new menu include an Indonesian dish of Sotong Masak Sambal Belado (market price), which features fresh, sweet squid cooked in a fiery, bright sambal of tomatoes, chillies, lime and lemon basil leaves, and Prawn Sambal With Petai ($26), D’Silva’s all-time favourite recipe passed down by his grandmother." - Michelin Guide Digital-Singapore

I was excited to pop into Folklore last week after finding and following them on Instagram. They carry some goods from small makers that I like, and it's always nice to find brick and mortar stores that carry things I often just admire online due to limited distribution. Unfortunately whoever was working that day (I believe it was the owner?) decided that her personal phone call was more important than telling me about her store; she stayed on the phone the entire time, and even stepped outside for the duration of our visit. When I was ready to buy a $20 bar of soap, I had to deliberately flag her down from inside the store. My partner wanted to pay with cash. Didn't take cash. Wanted to pay with a card via their phone. Couldn't do that. Couldn't even swipe a card! She punched in the number by hand. Overall, very weird experience, and I'd rather shop these brands online. Maybe this flies in Santa Fe, but such a poor customer experience and sparsely stocked store wouldn't float in a city on either coast.

A wonderful mix of handmade home decor, apparel, jewelry and accessories. Located in the historic district of Santa Fe. We especially like the local ceramics and hand woven pillows and rugs.
