The 18 Best Restaurants in Bologna, Italy | Eater

"Given Forno Brisa’s motto “fanculo la dieta” (fuck diets), you can trust this independent bakery enterprise for carbs. The team emphasizes slow, wild fermentation, ancient grains, and an all-inclusive work culture. Come here to see how Bologna does bread artistry, third-wave coffee, savory breakfast pastries, and vegan cakes. Plus, if you’re craving a slice, Brisa offers highly digestible, Roman-style pizza with delightful flavor hits like ’nduja and burrata, anchovies, or classic tomato. They offer craft wines by the glass and bottles to take away with the pizza, too." - Coral Sisk

Perfect spot for a break, be it savoury or sweet. They have several vegan options, all clearly indicated (labelled in green). Small but nice outdoor seating area. Friendly staff and good beer. Overall a very good vibe. My focaccia was good though slightly too greasy.

I very much like this for aperitivo, they have very nice focaccias, pizzas (and they sell very good coffee if going in the morning) slightly more expensive then the average aperitivo place but that’s alright. The have an interesting wine card with loads of natural wines.

Our favourite place for coffee during our visit. The ricotta and spinach pastry are the stuff of dreams. Awesome service.

Friendly, personalible service. Absolutely incredible home made sour dough pastries and best coffee we've had in Italy. Especially worth noting the cold brew and cappuccino made with Ethiopian beans. Perfection!

A wonderful place for a coffee and pastry. The woman who served us was very friendly and helpful (her English is much better than my Italian). We sat outside under the portico and felt so relaxed. The perfect spot to relax. Highly recommend!

What a beautiful marriage of old-school Italian classics with a new-school palette and refinement. Their values and mission are as delightful as their pastries. We stopped here twice with our five year old daughter, and were absolutely delighted. On top of the incredibly kind and cheerful staff (who also graciously offered some samples), the quality of the baked goods was amazingly high. The textures and flavors were perfectly balanced; airy, crunchy, and not overbearingly sweet or salty. Cappuccino was stellar! It was lovely to also see that vegan options were available.
