3 Best Day Trips from Melbourne to Mornington Peninsula, Daylesford, and the Yarra Valley | Condé Nast Traveler

"Enter this industrial warehouse to find a welcoming, contemporary space. Huge porthole windows allow views into the distillery, where the award-winning spirits are created in three copper stills. There are groups doing tastings, and others sitting around the high tables sipping on cocktails. It’s all very jovial. There always seems to be a crowd, even when the doors open at 10.30 a.m. For a small distillery, Four Pillars makes an excellent range of gins. Partake in a tasting of the different varieties, order a gin and tonic paddle (staff will tell you which tonics work best with which gins), or take on the build-your-own Negroni." - Carrie Hutchinson

I can’t believe they have a happy hour (2 hours) on a Friday night! Half price gin cocktails. And Four Pillars make some of the best cocktails I’ve had. Each time we visit there are some great additions to their seasonal menu along with their classics. A good selection of food to - snacks and full meals. We enjoyed the Gin and Tonic tasting in the distillery mezzanine as well. Being talked through their different gins and trying them with different tonics is a great way to explore their offerings.

We visited Four Pillars yesterday and were so impressed by how friendly and welcoming all the staff were. We had Cooper for the G&T tasting and Brandon for the distillery tour - both were absolutely incredible. We also met David, who entertained us while we waited for our next session and even treated us to some Shiraz Gin. SO good! Highly recommend this place. Great people, great vibes, great gin.

My first time at Four Pillars and it excelled beyond my expectations. The atmosphere and dining areas were carefully curated and inviting. I went with a number of my family and we all were amazed by the service from Sonia. It’s an experience we would definitely recommend again to others. Thank you Four Pillars

🥃 Here I had one of the best gin tastings I’ve experienced. 🍸 Not only because of the 6–7 different gins included in the session — all of them good — but also because the presentation itself was excellent. ✅ The host (Tom, if I remember correctly) was genuinely passionate about what he does, and that clearly came through during the presentation. 🍴 There is also a restaurant on site, although I didn’t try it. ☝️ Tip: if you plan to buy a bottle of gin, check prices in Melbourne first. A gin priced at $86 in the winery’s showroom was available for $68 in a shop in Melbourne.

Such a lovely experience with Brandon! We learnt so much about the different gins, their unique blends and how easy it is to make elegant cocktails at home. 10/10 would recommend! Brandon was also the best, super fun and entertaining. x

Popped in on Friday around 5 p.m. and the place was absolutely buzzing. Happy hour kicked off at 6 with great drink specials, amazing cocktails, and a full house. The yuzu gin was incredible and the yuzu sour cocktail was even better. The staff were fun and friendly, and the whole place had a great energy. They also run a happy hour dinner on Friday nights, which looked awesome. Definitely the spot to be and probably my number one pick when visiting Healesville.

Four Pillars Gin was not even in our original plan, but we were already in the mood after champagne and wine stops, so I thought, why not complete the circle with some gin? I am not exactly a gin person, but I have to say, this stop made me rethink that a little. The gin was great, yes, but can we talk about the duck pate? I had it after a full cheese fondue lunch at Chandon, and still managed to finish the entire jar by myself. It was creamy, flavourful and went so well with their crackers. Honestly, I would go back just for that pate. For the drinks, I ordered the gin tasting set which came with four different types of gin, served with tonic water on the side so you could mix to your liking. I got to try a few variations, but the one that really stood out for me was the Shiraz Gin. It had a nice depth and smoothness that I did not expect. Easy to drink and very well balanced. The place itself has a cool industrial chic vibe, very open and relaxed. Staff were friendly and made the tasting experience fun without being too formal. It did not feel rushed and we got to enjoy everything at our own pace. If you are in the area, even if you are not a gin lover, I say give it a try. You might leave with a new favourite and definitely with a full stomach.

We had a couple of fantastic Christmas special cocktails and a bite to eat here. I’m in love with the pumpkin & feta arancini, I could eat the by the bucketful. Love the ambiance here and the staff are so friendly and helpful.

Yelp
Excellent gin tasting with delicious cheeses, breads and jam to compliment. Gin Favorites with tonic was apple rhubarb, then Shiraz...

Yelp
Go and get your gin on. This distillery can feel out of place location wise; but what they're doing here is San Fran Spirits Competition Gold metal winning. Yep, you heard right. There's a friendly chap at the door to greet you and give you a run down of your options. You can do a $10 tasting of the gins they have. Or you can just go to the bar and order. I opted for the GnT tasting paddle where you get three of the standard gins and a bottle of tonic water to go at your own pace with. To say that this place got crowded is an understatement, nearly all the tables filled up, inside and outside. A corner is filled with retail take home goodies. Booze books, gins large or small, even sample packs. They have a lovely copper bar tending set and custom Four Pillars glasses. All in all, I liked it here. Like really liked it. Although there isn't much where food is concerned, just the like to nibble on, olives and peanuts and such. That doesn't matter though, you're here for the hand crafted, high quality, awesome gin they put out. I came home with a bottle of the Bloody Shiraz gin and felt like it was Christmas time with my self gift. Can't wait to make a yummy Negroni or gin and tonic with it. You can find their gin at bars all across Melbourne. But there's something special about going to the source to try it.

Yelp
Wow if only there were more Gin tastings around.... Walking in here the first thing you notice is the amazing aroma, it smells fresh, spicy, and complex. Although the building is huge on the outside, the place was full when we visited. There's a some bar tables around, counter and tasting area. Tasting is $10 per person and redeemable on purchase. We had to wait some time for tastings so decided just to buy a bottle of their standard. I am definitely keen to return and experience the full range but for now just excited to see Gin maker that presents their product so well and beautifully and local too !!

Yelp
I didn't even know this was here but couldn't resist popping in and giving it a go. They distill smallish batches of premium gins. We had a $10 sampler which gives you a taster of all 4. There's the 'standard', Navy strength, a blend with Macadamia nuts, and a barrel aged gin. All were fab and we came away with the first and last on the list. The prices per bottle are pretty steep but you can redeem your $10 sampler money off a bottle. The staff were knowledgeable about the products and the history of gin itself. There's a bar here but the only food they have is snacks like nuts and toast with orange marmalade made from the left over oranges used in the distilling process. Will be back!

Yelp
Gin heaven. If you haven't tried the four pillars gin yet; get here now. And if you have, well I'm preaching to the converted. This place is beyond amazing not just because of the gin either. First of all though, the gin is pretty bloody great. They have a couple of standard styles that they do; the navy strength, the rare dry and the barrel aged. There now seems to be a negroni spiced gin and various other fun collabs or experiments that pop up which is excellent news for my spirits cabinet. You can buy their gins here and/or taste them. In cocktail or G&T form. I recommend do all of those things. The menu consists of a couple of very classic cocktails, with the four pillars twist and you can build these cocktails up by choosing from your favourite gin, vermouth and garnish. You can do this with gin and tonics too or you can get a tasting paddle so that you can really appreciate how different they all are. Food is simple snacks such as nuts or olives and please be aware the 'Red Snapper' is a gin based Bloody Mary like drink, not a fishy feast. The space it's self is a big beautifully converted warehouse which is 1 part tasting room, 1 part distillery and 10 parts storage. The whole place is riddled with inviting natural light and you can also sit outside. All of the tables are big and high so if you do turn up as a big group there should be space for you all to fit in. You can book into tours (think they do walk in for a tenner) and for bigger groups you have to book in advance. And lastly, this place is awesome because they seriously have the best staff ever. Oh and the guys that run this place rock. Lots of love all around. Who said gin makes you sad. Not at this place!!

Yelp
Worth the wait to go on the gin tasting tour with great explanations on how they make it. Bottles to buy home can be found cheaper in Melbourne.

Yelp
You have to stop in here... it should be hard to miss on the left as you come in to Healesville from Melbourne. The gin here is something you must try - if you like gin. Try the g&t taster and work your way through three top gins. I loved the Navy strength. You can tell they know how to treat gin by the tonics they apply to them. Fever Tree tonic can't be beat. Yum!

Yelp
Love this place. Super friendly and knowledgeable staff. Delicious gins and a small but tasty array of snacks. Will definitely be going back!

Yelp
Don't be put off by the crowded entry, you are quickly greeted and given the scoop of what's going on. Basically you have a choice of tasting gin straight or making your own G&T. We chose the tasting and was educated by the big tattooed love boy who's thinly vailed deviance we could relate too. They love what they do and know what they are doing and it overflows into a fun environment. If you like gin the $10 tasting fee is irrelevant because your going to buy a bottle. It's the most fun thing to do in the Yarra Valley with the exception of boxing a kangaroo at sanctuary. Awesome.

Yelp
What can I say.... It's great to see a local (warrandyte) gin receive world acclaim... and fantastic to see this Mecca dedicated to enjoying the growing portfolio of Four Pillars Gina which now counts 'navy strength' and 'negroni' optimized and 'aged' in its list, open in Healsville. Beautifully decked out, educational, fun and worth adding to an expanding list of reasons to visit Healsville (Yarra Valley area).

Yelp
Not a good experience with Four Pillars sadly... Very average customer service, felt quite unwelcome. Expecting to learn a bit about the brand and happy with their $10 tasting fee. Waited around for 15 min. with no one willing to help. Crowd around looked pretty boozed up including some staff. Definitely would not associate with the rest while sober. Complained about it and they handed my $10 back. Not really what was after, but still not discouraged try others. The Kangaroo Island KIS was great overall in comparison. Drove 800K to get to Four Pillars... surely there are others Aussie gin producers, providing better customer service out there.

Yelp
Well Worth The Visit On the trip from Melbourne - Lilydale on the Maroondah Highway travelling into Healsville, the Distillery is located just as you come into town on the left hand side, which makes it stand out, and hard to dive pass. The building is impressive modern take on a shed with great amount of glass, steel to give a great stance of what a solid building should be. On entering we were greeted with warmth from the initial guide for the establishment, asking who is driving and have you been drinking today......'Halleluiah' an business that takes 'Responsible Serving of Alcohol' seriously and is a comfort on entering the business that they care for me to advise caution when consuming the Gin samples today, Thank you. We were advised to venture to the bar and purchase a sample glass for $10, then to join a small gathering of people who were on their journey exploration the selection at 'Four Pillars Gin'. The guide for our exploration was Sensational, with a very strong base of product 'Knowledge' and distilling procedures, mixed with the 'Skill' to evolve and engage everyone on their journey which was one of the best presentations that I have experienced. There were four different Gins on the tasting table from Four Pillars Gin, plus another from a joint venture with a Mexican Distillery. The selection of Gin displayed the complexities in the different gins the different flavor profiles and how it balances in the mouth. For anyone who likes gin this is a deferent stop on your travels and for anyone who may like or not really across what Gin is this is a great stop to explore the subtleties of great Gin.
