What a great pizza and team! We have tried a few of their pies so far and they have not disappointed. What's best is you can really tell they care about the local businesses around, and the quality they put out. When I tell folks at work visiting MA that Frank Pepe's just opened up you should see the faces of the ones from NY, NJ light up. Clearly you are an east coast favorite!
I'm a bit weird, but that why I love your pizza. You've got the right stuff! Crispy, crunchy, soft, chewy, thin, and yes burnt in all the right places. Your toppings are generous, where's my fork? Best of, I'm notorious for eating leftover pizza for the next two days and you can really tell when you've got a great pizza how it tastes after throwing it back into the toaster oven. I promise you if you haven't already, toast your leftovers and it'll taste like it came back out of the oven for the first time. That chewy and crunchy crust remains. Even the clams on the pizza is still tender, garlic is a little crunchy, YESSSSSS. Same goes for the veggie pie, crunchy and caramelized vegetables, yes please!
I also like throwing some red pepper flakes on my Pepe. Yum!
Oh, ricotta pie is wicked good too! Not too sweet, and you can taste the ricotta how it's meant to taste reminding you of those late weekend nights you stumbled into Bova's bakery in the North End looking for a slice of ricotta pie to soak up the alcohol lol!
