Christmas Tamales by the Dozen: How Mexican Businesses Prepare for Tamal Season | Eater

"The restaurant’s principal tamalera, María García, is a 25-year veteran who applies traditions taught by her grandmother in Guerrero — including kneading water into the masa until it has the right consistency — and adapts those methods to the restaurant’s flavors and volume, ramping up production as the holidays approach with help from other staff. Ahead of the holidays the restaurant orders about 120 pounds of masa per week (versus 20 to 40 pounds in a non-holiday week) to fuel both in-service tamales and thousands of additional tamales sold to customers via an online retail platform between Thanksgiving and Christmas. García prepares batches that staff can steam in an industrial steamer — prepping batches of 100 so they can cook in 40 minutes — and approaches the work as a labor of love. “My mother and grandmother loved to make tamales so much, and every holiday, I’d watch and begin to help them little by little,” García explains in Spanish. Culinary director Zach Steen marvels at her output: “I would love to tell you the story of María toiling over the steamer, but honestly, she’s so amazing,” and recounts that when he tells her, “Okay, María, it’s Goldbelly season. Overall a good good meal at a reasonable price with great, friendly and fast service. Like any food, personal tastes can vary. We were immediately greeted by the host and seated and almost immediately provided with fresh chips and salsa. We were even given a refill of chips. The Marco Polo tacos, with bacon wrapped shrimp were definitely the highlight. As others have said, absolutely delicious. The filling portioning between the two tacos was a little inconsistent, but filling nonetheless less. The Pollo pablano was delicious as well. A little on the sweeter side compared to other places and a little heavier on the sauce. Not a complaint so much as something to be aware of, as I might ask to go lighter on the sauce but others will enjoy. The rice and refried beans were tasty as well. The kids burger and fries are delicious as well. The one thing to be aware of is the burger is charbroil. Kids being picky, some will like and others won't. Not a problem but just something to be aware of when choosing what to order. Throughout the meal the staff was friendly, observant and not intrusive. A wonderful experience over all.

As I always say when I give five stars, I don’t give it out easy but frontera never disappoints. Complimentary Chips and salsa I’m guessing are home made and are very good, I got the two item combo that was very reasonable priced at 14.99$ish and was more than enough food. They have good options for the kids, American style food if your kids aren’t big Mexican food fans. The service is incredible, there’s always someone coming by to see if we need anything. I really can’t say enough good thing. Other restaurants take note!

My family went to dinner and sat in the bar area, As a customer, who loves sports, I shouldn't have to watch on all 7 televisions, new station that do not suit my interest. I have enough stress as it is, to then sit and try to enjoy my meal watching negative news the whole time. Please be mindful about this, for I will not return and I know I speak for many others.

My wife and I were in Springfield for a college baseball tournament. As fans of Mexican non chain restaurants we headed to Frontera Grill. We sat at the bar as we typically do. They greeted us with a healthy portion of chips and salsa. The salsa was excellent. Sweet tomato base not too spicy. On to the drinks We had the Patron margarita A typical red flag for me is when I see a pre made, jug, keg or whatever when it comes to a drink. Surprisingly these were great. Flavorful and strong which is unusual for a pre made cocktail. For dinner we had the chicken, steak and Shrimp fajita with rice and beans Very good, However the shrimp tails were not removed which is problematic for a fajita, in my opinion All in all a solid enjoyable meal With good drinks

I went to this restaurant one time, and you know what? It was so good. I had to come back three more times just to make sure it was really that good. It was really that good. Food: the food was spectacular, I ordered the TexMex combo for two, and it came out fresh and hot, steaming on a large steel platter. Steaming hot tortillas and perfect sides. They had someone going around with an avocado cart, and crushing up guacamole special per table. That guac hit the spot. Service: Everyone here was hype af. The service was happy, the bartender seemed to be chilling, and there were tons of people in the establishment chowing down on delicious food. Ambience: it was well decorated and seemed to accurately represent the classic "display of culture" any restaurant wishes to display. Everything at this place hit the spot just right!

The quality of the food has gone way done since Frontera Grill first opened. They now pre-cook nearly everything. Granted, you get your food fast, but it's not great. I had the chicken fajitas last night and both the chicken and the rice were very dry and over cooked. We live within walking distance but it will be crossed off our list as our "Go-To" restaurants.

I've been going to this place for years. Always great margaritas. Food is good. Yesterday we went for dinner with friends. Margaritas still great. Excellent service. But meals were disappointing. My Mediterranean tacos were dripping with grease. Same with my fellow diners, one said, tip the plate.. pour off the grease....The portions have recently gotten smaller also. The rice was white with mixed veg in it??? Beans put in a tortilla cup? So you get a tablespoonful... I know Garcia's in Amherst is the same owners. Why not the same food quality,? and same menu??? I love Garcias veg burrito... I have to go to Amherst to get it...

Visiting from Austin Texas and wanted to try some TexMex here in MA. Margarita options were ok, avoided the ones with a mix and got the Skinny Lime. Very good. Missing some other Mexican cocktails like a Mexican Martini or Paloma. Ordered the "Jalapeño Cheese Dip". Very good but please change the name to Chile con Queso. Table salsa and chips were fine, not really spicy. Had the Seafood Enchaladas. They were good. They came with a cheese based sauce which was a bit odd. Would have preferred a green sour cream based sauce. Tortillas were pretty basic and what you would get from the grocery store. Got a new waitress, service was ok. Overall good.

I really had high hopes based off the reviews but overall it was highly overrated . The best thing was the margarita and mariachi band . Service wasn't bad, ambiance was nice . Food came fast .. lukewarm with little love . I think I counted about 4 pieces of steak in my entire $20 chimichanga . Though my margarita was tasty it was not $18 worth either. Overall .. meh .

We were out and getting pretty hungry so decided to stop in at the frontera grill on the way home for dinner. Chips and salsa were brought to the table which was nice. The salsa was great, the chips on the bland side and unsalted. I ordered the presidente margarita and it was great, I would have liked to have another but I was driving..... For dinner I had the chicken enchiladas de mole which came with rice and beans. They were good, I would have liked more of the mole sauce. I'll be back to try some of their other menu items.

Got food to go and it was decent. Tacos were tasty and it came with a lot of food. The jalapeño cheese dip was a bit underwhelming so I probably wouldn't order it again but over all solid meal. The chips and salsa that came with the meal were good as well.

We decided to eat here because of World Cup soccer. If anybody who is anybody watched the games this year, there was a local ad with the boy who thought that the chicken quesadillas were "De-LISH-ous", complete with ridiculous hand gesture that you couldn't forget. Being a fan of good Mexican food, we thought why not. This place was easy to find in Chicopee, and it was right near Dairy Queen which is good for dessert. One of the perks was that even though it was busy, we were seated fairly quickly. Our waitress promptly came up with a cart and offered to make fresh guacamole, which is always a treat. We especially loved one of their two sauces, which I found to be pleasantly garlicky. We all agreed that the majority of the food was better than average but not amazing. It should be said that there is a lot of decent Mexican food in our area from being in a seafood state, So amazing is hard to come by.The atmosphere was comfortable and fun, and we would probably eat there again if we were in the area. From where we live, we can go down into Connecticut and have delicious Mexican food made fresh down there as well. I'm always waiting for a delicious spinach enchilada to come my way, and I have still yet to find it. Despite the chain connotation, Chi-Chi's use to make some excellent enchiladas and I haven't found anybody who can match their enchilada sauce.

Food was super Delicious, probably the most authentic Mexican food I've had in Western Mass so far. I tried this place for the first time on Cinco de Mayo of all days and it was slammed of course. But considering how busy it was, the quality of the food, drinks and service maintained top notch standards. I was very impressed. We couldn't stop raving about the food, especially with the volume of people, quality did not go down. My new favorite Mexican place.

We pulled into the parking lot last Friday night, it was packed and more people were coming in. We were seated right away,the waitress came over and gave us salsa and chips. This was our first time eating at Frontera Grill. The menu was basically the same as On the Border. So we ordered the queso and two individual chicken fajitas dinner. We started eating the salsa and chips, there was something really off about the salsa and I stopped eating it. The queso came and we both took a big heaping bite , I spit mine out I am really disappointed and we didn't even get our dinners yet. We weren't going to take our chances at a lousy dinner. We paid for my beer and headed to On the Border, it's like night and day. Please don't go to Frontera Grill all the good reviews on this restaurant should be taken with a grain of salt.. the salsa and queso were disgusting...if you want delicious Mexican Food On the Border is the restaurant you'll want to go to!

For $20 I figured it would be a good Carne Asada burrito. Disappointment is a nice word! The meat was plain, the burrito was small, the salsa tasted like tomatoes and nothing else. I got the habanero salsa and it was better. I wouldn't recommend this for Mexixan food. Go to Chipotle instead as it taste better and less expensive. Both have crappy service but for the price I won't be back

An incredible experience! The staff are the nicest people people that I have encountered at a restaurant in, at least, a decade. They welcome you when you arrive and are prompt & courteous throughout the meal. My wife and I ordered the tableside guacamole - an absolute must! We asked them to add mango and it was amazing. I don't drink, but my wife ordered the top shelf margarita. She thought it was excellent. I had the chicken quesadillas and my wife ordered the chicken fajitas. Both portions were sizable and very good. Please note, the rice is traditional & contains peas. A+++ for every part of the experience and I would recommend Frontera Grille to any fan of Mexican food!

Authentic Mexican restaurant, great margaritas and food. Service is decent. They have $1 tacos on Tuesdays which you can't beat. I ordered the Worlds Best tacos with refried beans and rice. Comes with skirt steak, mangoes and cotija cheese on a warm corn tortillas. The salsa and chips were nothing special. Salsa was watery and had no flavor which is why I took one star. Otherwise the food and drinks were great.

I went for lunch and my dad and I both ordered burritos. Literally 2 minutes later our plates were delivered. It was very obvious these had been pre-made: frozen bag of vegetables containing green beans, carrots, peas and corn were mixed in with the rice and the meat was very tough/chewy...nothing tasted fresh at all and I could only eat a few bites. I was very disappointed as the Frontera at Eastfield is amazing, very tasty and very fresh. I suggest you skip the Chicopee restaurant.

i went to Frontera and got shrimp tacos. the shrimp was rock hard. i took two bites and got grossed out. i asked for them to take it back but by the time the waiter had came back i had eaten the rice and beans because i was starving. he asked if i wanted them to remake it but i said no because it had really grossed me out. they came back with the check and it was still on there, so i asked him to take it off. he came back again and it was still there but with a 50% discount. i asked for the manager and he returned with the entree removed but they charged me for the side of the rice and side of beans which was basically equivalent to the price of the entree with 50% off. i had spent plenty of other money, my friend and i each had a large margarita and she had an entree and we split an appetizer. it's not like i had eaten half the meal and sent it back, i took two bites. the manager (not positive it was the manager but that's how it seemed) was standing there staring at my friend and i at the table as we were getting ready to leave even though we had asked to speak with him. my friend left a scrunchie at the table so he followed us out to the car to give it back then proceeded to spit on the ground right after we got into the car. edit: also got food poisoning from the shrimp

We were so disappointed with the food and service at Frontera Grill today. We are snowbirds and this was one of our favorite restaurants in the past. We went for lunch so it was not too crowded. My husband ordered chicken fajitas and I ordered a quesidilla fajita. The food arrived in like 3 minutes but it was barely warm, the chicken was tough and obviously had been sitting for awhile. The salsa was mediocre at best. My husband asked for hot sauce and he finally had to get up and remind the staff (while his barely warm food got cold). Husband then asked for one more fajita wrap and was told he needed to buy four....really?? Is this establishment under new management? We won't be back.

We've gotten takeout twice now in the last month, and it has been a great experience. Tons of food..I wish I had pictures. The dinner burritos are huge and can be easily made into at least two meals. I had the espresso burrito which is pulled pork, and we've also ordered the carne asada burrito as well. Last time I got the chicken enchiladas with verde sauce and it was absolutely delicious. We also order the fajita steak quesadilla for an app, and there's free chips and salsa included with the order. Delicious!

The atmosphere is made by the hand tiling (they're beautiful) and music that's the exacts right volume. Quick and friendly service, delicious food and wonderful atmosphere.

Went here for a baby shower this past weekend and the staff were WONDERFUL. We had a large group of 15+ people in their back function room and we had people trickling into the party over the course of maybe 40 minutes. Not only were the staff super gracious, but they also split up the bill correctly into seven checks, took everything in stride, and were very patient with our large group. I was very impressed. The restaurant was clean, with what looked like three huge dining areas as well as the smaller function room we were in. It must be a popular spot because it was packed on a Sunday at lunchtime. The food here was surprisingly good as well. My daughter and I both got tacos - fish and chicken - and everything was delicious with a nice crunchy slaw and tasty sauces on top. The beans and rice were yum, the portions were huge, and they kept the chips and salsa coming. No complaints whatsoever; I kinda wish they weren't an hour and a half away or I'd go back!

I have been a customer for years now....but today I went to the Chicopee MA Frontera Grill and actually was very disappointed on their pricing. My teen step child ordered chicken tenders and the waitress asked her if she wanted fries and she said yes. When we got the bill, the tenders were 15.00 alone and almost five bucks for "Fries". Now that's 20 dollars in total. Now these were basic tenders, like they looked bought from somewhere and basic fries, but yet we got charged higher than almost everything on their menu for this. This is not fair pricing at all,this is basic food, not your gourmet dishes which were mostly priced under 18 bucks. I told the waitress also about this and she just said she would bring it up to her supervisor. Nothing else happened, they collected my bill and proceeded to rip me off for some basic good. You lost me and my entire family as customers.

Bartenders were amazing to watch but all the cocktails came out of a mix and in plastic glasses. A lot of handwritten signs were tacky everywhere...

One of the most authentic Mexican places around this area. The strange yet familiar taste in my mouth felt like lard (Manteca), which I haven't had since childhood. They really use authentic flavors, yet the food didn't ever seem greasy. It was a bit of a challenge to find something on the menu that was diet friendly, but it can be done. The fresh tortillas and salsa on the table are fantastic. My mojito was also well made. Service was attentive. No complaints at all. Try to visit on Mariachi night. Great place.

Sadly there is no more taco tuesday. But there is an annoying, obnoxious Mariachi band on Tuesday. There were 7 in our party and we choose Tuesday for taco tuesday and Wednesday was the Mariachi band. Not any more! We couldn't even talk to each other over the band. Then they came to our table and asked for requests... they couldn't take a freaking hint! It was frustrating, our server could barely get by them with our drinks. Food wise it was good. The homemade guacamole had too many mango chunks besides for that it was delicious. My Margarita was fantastic! My request is to pease up date your website so people know when a band will be there.

This place is always busy. Taco Tuesday packs the bar for $1 tacos. They're crappy but filling and the same ppl are always there. Sometimes you go and it's not for the food. In fact, I'd say don't ever go to Frontera if good Mexican food is what you're hankering for. If, however, you're game for a mix of Tex-Mex and Mexican American w some odd flavors thrown in, this is the place for you. When we arrived the dining room was so smoky from sizzling fajitas that the smoke caught in the back of my throat and I had to go outside for a few minutes. Then, as I scooted across the booth seat my feet slipped out from under me on the oil slick floors. We only end up here when someone has asked for it by name and I acquiesce.

They offer some fantastic fish tacos, and really solid Mojito selections! Prices are fair and the service is always great. The establishment is clean and the staff is always friendly. After being stationed in San Antonio Texas, traveling the entire west coast and visiting Mexico... I'm very picky when it comes to Mexican food. It's one of my favorites, but not all Mexican food is created equal. For years since I moved to the Greater Springfield area, I was forced to drive nearly an hour for decent Mexican food. I recently visited Frontera Mexican Grill in Chicopee and I was so pleasantly surprised. Not only was the food amazing, but the service and the staff was top notch. I'm definitely coming back as often as I can. If you like Mexicab food, Frontera Mexican Grill is a MUST!

Frontera Grill used to be the best Mexican restaurant in the area with the exception of maybe Mama Iguanas. Now, not so much. While the food is generally good, they definitely pre-cook the chicken for their fajitas. Whatever you do, don't get the chicken fajitas for lunch as the chicken is leftover from the previous night and is very dry!

Nope, this isn't mexican, they want to be but they're far far from it. I had a small, understuffed seafood chimi, it was tough, undercock, lacked the sauce mentioned in the menu, the rice was mediocre, the beans weren't bad, but didn't taste freshly made. and the enchilada was just a congealed mess. i wont be back and can't recommend them.

Brought my family there last night to celebrate a promotion for my son in law. We were a party of 12 which 5 of them were children 14 and under. We arrived at 6:30 with reservations , we ordered by 6:50 and didn't receive our first couple of meals until 7:50. We sat waiting another 20 minutes as the other dinners trickled in while some were eating, others chose to wait. The youngest, an 8 year old, was the last to be served a hamburger ! A few desserts were ordered and they couldn't arrive together either!! We left the restaurant at 9:10 P. M. The food was unfortunately just o.k. I have to say the waitress was great and apologetic and we understood it was not her fault . we would have appreciated someone from management coming over to acknowledge their lack of service and our frustration. We won't be going back for a while !!!
