I'm in Napa again today. It seems like I've been spending way too much time in Napa. I really like Napa, it's beautiful in Wine country. I like the weather here today, it's in January but it feels like it's in Febuary. I'm glad to be in Napa again. I've been meaning to do this for a long time too. I like how the Parking lot in the alley was so easy to get to, even though there was a good amount of cars here, I managed to get the last parking space. There's a Standard HVAC Napa truck in the back, so I'm thinking it's that time of season to work on their central heating & cooling system. Today is the day, for Pizza time. The decor looks intimate, cozy, elegant, charming, it featured some intricate art work, with neutral and warm colors in here. The exterior look as good as the interior of the building. I appreciate clearly seeing the Oven from the dining room. I know what a Caesar Salad from your favorite Steakhouse looks like in Las Vegas. But I never heard of a Grilled Chicken Caesar Pizza. I don't see that everywhere, it's different, and stands out. Is the Pizza going to taste or resemble a Caesar Salad? I'm amazed that they do Wood-fired Pizzas here. This Pizza have Grilled Chicken, Creamy Garlic Aioli, Mozzarella, fried Capers, and shaved real Parmesan. I don't think I ever had a Pizza with Creamy Garlic Aioli. It was either Red Tomato Sauce, White Sauce like a Garlic Sauce, or Pesto. I've had fried Capers in my Chicken Piaccata or Parmesan Crusted Petrale Sole, but never on a Pizza, this is the first. I didn't expect the Pizza to look like this, but it looks good. Papa Johns Pizza created a Cheeseburger Pizza some time ago, and like the Taco Pizza that was made out of Cheeseburger ingredients or Cheeseburger flavored. I never seen a Cheeseburger Pizza with a whole Cheeseburger literally on top of a Pizza. Conceptually it's creative, but it isn't easy to pull off. Usually, I've seen some Pizzas have Arugula on it. But I never seen a Pizza with a Caesar Salad on it, but this works out. The Caesar Salad was dressed very lightly, so it's not overpowering. I like how they delicately layered the Capers on the Salad, instead of the Pizza itself and I think that was an effective way to do that. It's like getting the best of both worlds. I've used Capers a lot times in my cooking, and this one doesn't taste like the jar normally found at the Supermarket. The Anchovies was slightly fresher and brined better than Round Table Pizza. The dough is chewy, but not too chewy. The dough is slightly less airy, and more light, formed, and textured like a Bonchon Korean doughnut coated with cinnamon. The Crust and char on it was very different than a lot of other Pizzas I had out there. And the Grilled Chicken was smokey and pleasant, with the Creamy Garlic Aioli or Alfredo like sauce. This felt like a gourmet Pizza. I was thinking this was going to be a 4.1-4.2 stars, but I give this 4.3 stars.
