"With a simple ring of a doorbell, you are transported to an elevated dining experience set in what looks like someone’s home. It starts in the Scandi-inspired sitting room for canapes and aperitifs; then, dinner takes place around an impressive open kitchen, where you are greeted by the chefs before service begins. An array of dishes showcases the blend of Asian and Scandinavian influences that make great use of the finest luxury ingredients, such as shellfish from the Norwegian Sea and turbot from Brittany. The team’s craft and precision present a superb balance of flavour and texture seen across all the plates." - Michelin Inspector

One of the tastiest, if not the tastiest meals I have ever had. Each plate was like a piece of art. The service was equally in perfection to the food as we were guided through this amazing experience. The first time I would ever award a big Wow to my restaurant reviews. Its absolutely deserving of every of its three Michelin Stars. Even the music seemed to have been carefully selected to align with the meals and different wines. Very highly recommended.

This was my first Michelin star experience. I’ve went straight to three Michelin star, I genuinely loved every single detail they put in the restaurant other than the food how loving the staff is how kind they are how passionate they are to their jobs. They made me feel like I’m at home . The kitchen has such a nice cozy home vibe to it the way they greet you the way they serve you the way they explain everything in detail. It just shows passion and love. The food was extraordinary I’m not gonna lie. They were one to 2 to 3 dishes. I didn’t enjoy as much, but the rest were simply a work of art so balanced, so artistic and very delicious. Everything they use is used for a reason. Absolutely amazing experience. I do feel like it’s for people who enjoy strong tasting flavors advanced food you could say. I definitely recommend this not only is it the best experience I’ve had in Dubai it’s the best experience I’ve had in my life Thank you FZN For this unforgettable night

This is exactly how everything should be in a 3 Michelin star restaurant! A very rare case when everything is ideal! All dishes — complete delight, very thoughtful and structured menu! All ingredients are unique and only top quality. Atmosphere, presentation, service — all 10 out of 10. My admiration to the chef and the restaurant team! Highly recommend.

I decided to try the 3-star Michelin restaurant FZN for dinner. The decor, the multi-level dining & the ambience are impeccable. The training given to the team members shines through. I felt the pick-me-ups offered at the living room were a bit underwhelming. The main dinner items were phenomenal & each dish stood on their own legs. I opted for the standard wine pairing. Although not a wine expert, my palate couldn't fully appreciate the pairing recommendations. My favourites were the langoustine & the turbot. On the OLA, I felt the almond overpowered the other elements. I couldn't get a sense of onion. For the desserts, I felt they could've been bolder and more intentional. Madeleines & fruit felt like a cop-out. All in all, a solid addition to the UAE's dining scene.

**FZN at Atlantis The Palm, Dubai** is a luxurious fine-dining restaurant that has quickly become a standout in Dubai’s culinary landscape since its opening on November 8, 2024. Helmed by the globally renowned Swedish chef Björn Frantzén, known for his three-Michelin-starred Frantzén in Stockholm and Zén in Singapore, FZN brings a unique blend of modern Nordic cuisine with Japanese influences to the Middle East. Located at the iconic Atlantis The Palm on Palm Jumeirah, this intimate 27-seat venue offers an immersive, multi-sensory dining experience that reflects Frantzén’s signature style of culinary innovation and meticulous attention to detail. Here’s a comprehensive breakdown of everything you need to know about FZN: ### **Concept and Cuisine** - **Cuisine**: FZN combines modern European (specifically Nordic) fine dining with Japanese kaiseki-inspired techniques and a touch of French flair. The menu emphasizes seasonal, high-quality ingredients sourced globally, with local herbs, dairy, and vegetables adding a regional twist. - **Tasting Menu**: The restaurant offers a fixed 12-course tasting menu (previously reported as nine courses in some previews, but expanded post-launch). Signature dishes include: - Duck barbecue with yuzu, Kampot pepper, and foie gras. - Chawanmushi with smoked beef broth and caviar. - Turbot with wagyu Cecina. - Råraka (a crispy potato roll with crème fraîche and Kalix löjrom caviar). - **Beverage Pairings**: Guests can choose from an extensive 1,300-label wine cellar featuring boutique and prestigious producers from 15 countries, alongside alcoholic, non-alcoholic, or mixed pairings. The non-alcoholic options, developed over a decade by the Frantzén Group, are a highlight, catering to Dubai’s diverse clientele. - **Price**: Dhs2,000 per person (approximately $545 USD) for the tasting menu, with wine pairings adding around Dhs1,400 ($380 USD). ### **Dining Experience** - **Structure**: The experience unfolds across two floors and multiple stages: 1. **Arrival**: Guests ring a discreet silver doorbell at the entrance, stepping into a gold-accented hallway lined with fermenting jars and pickles, setting a tone of understated luxury. 2. **Living Room**: A chic, art-filled lounge with plush seating welcomes diners with champagne and intricate canapés (e.g., shima-aji crudo blini with floral garnishes). Designed to feel like a cozy mountain retreat, it’s adorned with Swedish design elements like Svenskt Tenn fabrics. 3. **Dining Room**: Downstairs, a dimly lit, windowless space features a 13-seat open kitchen counter and four tables for up to 14 guests. The red-tiled kitchen, complete with open fire, allows diners to watch chefs at work, enhancing the theatricality. 4. **Terrace Finale**: The evening concludes back upstairs with petit fours, tea, and coffee in the living room, followed by an optional unwind on the 18-seat rooftop terrace offering panoramic views of Dubai’s skyline. - **Ambiance**: The atmosphere is intimate yet buzzy, with a 300-song playlist curated by Björn Frantzén himself adding a personal touch. The design, a collaboration with Bishop Design, blends Scandinavian warmth with Dubai’s opulence. ### **Team** - **Chef Björn Frantzén**: A former footballer turned culinary icon, Frantzén holds six Michelin stars across his portfolio. FZN marks his first fine-dining venture in the Middle East, driven by his vision to elevate Dubai’s food scene. - **Executive Chef**: Torsten Vildgaard, a Danish culinary heavyweight with over a decade at the three-Michelin-starred Noma and his own Michelin-starred restaurant, oversees the kitchen. - **General Manager**: Karin Ågren, a seven-year Frantzén Group veteran from the Stockholm flagship, leads a diverse team of 20 nationalities. ### **Design and Location** - **Interior**: FZN shares the same Swedish craftsmanship DNA as its sibling restaurants, with a focus on functional elegance. The living room evokes a stylish apartment, while the dining area’s open kitchen and counter seating create a sense of connection to the craft.

What can I say about FZN? Truly, an experience beyond words. My husband and I are longtime lovers of Scandinavian gastronomy - we’ve travelled extensively and dined at countless Nordic and Swedish-inspired restaurants. But FZN in Dubai? It genuinely took our breath away. It’s rare to find a place that not only lives up to the hype but effortlessly surpasses it. From the moment we arrived, the ambience set the tone for something special. Minimalist yet warm, with clean lines, soft lighting, and subtle Nordic details - it instantly transported us into a space that felt serene, elevated, and far from the everyday. And the food? Pure artistry. Every course was beautifully plated, bursting with thoughtful, layered flavors that told a story. It wasn’t just delicious - it was deeply moving. Being able to watch the chefs at work in the open kitchen added another layer of intimacy to an already immersive evening. What truly made the night unforgettable, though, was the exceptional service. Zdenka and Christopher were not only knowledgeable and professional but also warm, genuine, and clearly passionate about the experience they’re creating. It was my husband’s birthday, and they went above and beyond - from thoughtful touches during the meal to a kind follow-up message from Zdenka the next day, complete with the brand of wine glasses I’d admired. It felt as though we were reconnecting with old friends. FZN is, without a doubt, my favourite fine dining experience in Dubai. Elegant but unpretentious, creative yet full of heart. If you’re looking for a dining experience that engages all your senses and lingers long after the last bite, then this is it!

You want to try something unique and exceptional? You want to dive in a culinary experience, a real and one of its kind experience? Try FZN. I went to many very good restaurants around the world, restaurants offering unique and original meals, But this one is completely different. And the restaurant in Dubai, which opened a few months ago, recently got a 3 Stars Michelin. The same note as the 2 other restaurants of FZN.
