"Stamina Ramen Suzuki is my answer if you tell me I can only eat ramen at one ramen shop for the rest of my life. This bowl is so outrageously good, both in the spicy and non-spicy version. I personally prefer the non-spicy version, as I feel the spicy one covers up a lot of the deliciousness. The bowl itself is a mix of Jiro style ramen, Ariran style ramen and Kataoka-shiki. I also like to describe it as goulash meets Jiro style ramen. Heavy, rich, salty, garlicky, oniony, there is so much going on. It’s a must try for every ramen head and not difficult to access in Mitaka."

Wild experience. I didn’t check the hours and came in an hour early by accident, but it turned out to be a blessing in disguise as there was someone lining up already and within 20 mins the line already had a sizeable number of people. What’s even more interesting is this shop serves different kinds of ramen based on when you visit…I happened to visit at night when they serve their stamina ramen. The experience is very Jiro-like - cheap-ish, fast eaters, announce your toppings right before serving, and an expectation that you eat fast and not disturb the organized, moving queue. Soup: I’m not super familiar with stamina ramen, but it was heavily shoyu based with a very complex flavour profile. I was getting slapped by multiple spices, pork fat, ginger, garlic, pepper, I enjoyed it Noodles: thick, handcut-like, and chewy, enjoyable especially for the type of soup and toppings Toppings: sizeable wok fried pork with chives and lots of pork fat What’s even more interesting is despite how heavy the bowl looks, I didn’t feel too terrible after the bowl - mystery!

Hard to go wrong with Ramen In Tokyo and this is no exception. Rich broth lends itself to some additional heat and vinegar. I'll be back whenever i come to Mitaka.

Amazing ramen. Expect wait as this place-in-the-wall has only 7 seats! Worth the wait. The salt ramen is little on the salty side.

朝は「肉めん」の『すず気』見た目G系 昼は「鶏こく」の『』 コクのある塩、醤油で食べログ百名店2018-2021 そして夜はスタミナ炒めがタップリのった「スタミナ満点ラーメン」 夜の部「すず鬼」には初めて、会社の懇親会の後の締めとして寄りました。 21時45分着にて階段の上まで列が続いています。30人ぐらいかな。着席まで1時間20分ぐらいの待ち。この時刻ですごいですね。 オーダーはスタ満と「まさお」 まさおとはウズラの卵3つのこと。 提供の直前にトッピングのニンニク、生姜、背脂を入れるかどうか聞かれますが、欲しいものだけ伝えるそうです。生姜だけオーダーしました。 でできたスタ満を見てビックリ! 肉とニラ、玉ねぎのスタミナ炒めがトッピングされているのだけど豚肉量が多い!脂身がそれほど多くないしっかりした豚肉カットがゴロゴロ。全体的に濃い味でガツンとくる旨さ。背脂も乗せてライスもかき込んだら美味いんだろうな。でも、歳ですから夜中の背脂とニンニクをやめましたが、生姜が濃い味スープに効いて美味いです。麺は細麺を選べるようだけども、この濃いスープとスタミナ炒めに合わせるには中太縮れのゴワゴワしたこの麺がベストですね。 ごちそうさまでした。
