Wild experience. I didn’t check the hours and came in an hour early by accident, but it turned out to be a blessing in disguise as there was someone lining up already and within 20 mins the line already had a sizeable number of people.
What’s even more interesting is this shop serves different kinds of ramen based on when you visit…I happened to visit at night when they serve their stamina ramen. The experience is very Jiro-like - cheap-ish, fast eaters, announce your toppings right before serving, and an expectation that you eat fast and not disturb the organized, moving queue.
Soup: I’m not super familiar with stamina ramen, but it was heavily shoyu based with a very complex flavour profile. I was getting slapped by multiple spices, pork fat, ginger, garlic, pepper, I enjoyed it
Noodles: thick, handcut-like, and chewy, enjoyable especially for the type of soup and toppings
Toppings: sizeable wok fried pork with chives and lots of pork fat
What’s even more interesting is despite how heavy the bowl looks, I didn’t feel too terrible after the bowl - mystery!
