"In the city centre, a modern, welcoming room houses owner‑chef Gregor Jelnikar’s accessible bistro, set in a business district not far from RTV Slovenija; plenty of business lunches (three courses for 28€) give way to evening 5‑ and 7‑course menus and à la carte, keeping prices appealing for locals and tourists. The cooking is seasonal and transparent about provenance, marrying French technique with Scandinavian and Japanese fermentation; Jelnikar collaborates with Slovenia’s Kis in Kvas and curates a 45‑label list of Slovenian natural and biodynamic wines. A zero‑waste mindset shows up in smart uses of trimmings—vitello tonnato made after a 60kg Adriatic tuna became tartare, aubergine skins turned to powder—while signatures include roast veal with confit potatoes in beef tallow, corn and kimchi; a “cacio e pepe” turnip layered with cave‑aged Jamar cheese, egg yolk, different peppers, toasted sunflower seeds and fresh lemon (swapping in dehydrated tomato, stracciatella, red salsa and Slovenian Istenič balsamic in summer); and a buckwheat cream dessert with home‑made honey ice cream, a Kvass reduction and buckwheat popcorn. The dinner was casual and cosy. Love the contemporary décor of the restaurant. It was quite busy that night, and we were lucky to be seated at a window table, which gave us a bit of privacy. Our waiter was incredibly friendly. We enjoyed the 9-course tasting menu, including beef tartare, octopus tempura, chicken cabbage roll, 'Sarma', and banana bread. Each dish showed the chef's inspiration from various countries, Japan, Korea, and Russia, to name a few. We got an extra dessert (honey ice cream) for our birthday celebration, which made a perfect conclusion to our dining experience.

Every dish served was outstanding — beautifully prepared, thoughtfully composed, and full of creativity and flavour. The kitchen clearly pays attention to detail, balancing technique with originality in a way that feels both sophisticated and approachable. The service was another highlight of the evening: highly professional, genuinely friendly, and consistently attentive without ever feeling intrusive. The team managed to create a warm and welcoming atmosphere that perfectly complemented the quality of the food. The selection of Slovenian wines was excellent as well, showcasing the diversity and character of the country’s winemaking traditions and pairing wonderfully with the dishes. All in all, Georgie Bistro is a fantastic restaurant and one I can wholeheartedly recommend. It offers a memorable dining experience that combines inventive cuisine, polished service, and a charming setting — a true gem in Ljubljana’s culinary scene.

The place has a very lively bistro atmosphere, it’s loud but still fine for having a conversation. The food is really good, I think it’s a very good value for money. We took the 9 course menu with wine pairing and the wines were also great, although it did not feel like they had this pairing really establish or well planned. Still very recommended!

Fantastic experience! The staff was friendly and all the dishes we tried were amazing. The blue fin tuna was a unique but amazing taste. Sadly no picture of the dessert since it was so delicious. Furthermore, the wine list was fun and the staff helped in picking out local Slovenian wines to try. Plus the small details that make a dinning experience go from good to excellent were all there. Strongly recommend a visit if in Ljubljana.

The foot is good . The ambient informal . Prices ok . Cacio e pepe top , tartare top , parmigiana top , glazed cheek top , dessert too small.... Unfortunately the service not good . Not the right attention to the guest and service "unfriendly" . Paper napkins and to be on the Michelin and Millaut guide doesn't work. Good wines . Anyway a good place eating during the week days or at lunch, on weekends and dinner probably too many guest and table for 3 weiters.

The food was delicious! We chose the a la carte menu with three starters and a main course. The lamb tataki was excellent and their take on cacio e pepe with leek was both interesting and tasty. The glazed beef cheeks were tender and the mashed potatoes were super creamy. In short, every dish was amazing! They also have a great selection of Slovenian wines and the staff are knowledgeable and can recommend the perfect pairing.

We had a wonderful dinner at this Michelin-recommended restaurant in Ljubljana. We chose the 5-course tasting menu, and every dish was beautifully executed — thoughtful, well-balanced, and full of flavor. For the wine, we followed the staff’s recommendation and tried a Slovenian red, Laquin Jak. It was an excellent suggestion: full-bodied and rich, pairing beautifully with each course and adding even more depth to the meal. The service was attentive and professional without ever feeling rushed, and the atmosphere of the restaurant was ideal for an intimate dinner — warm, calm, and inviting. A memorable evening that showcased both the creativity of the kitchen and the charm of Ljubljana’s dining scene. Highly recommended.
