Sushi Ichi

"The silky smooth and tactile counter was fashioned from a 300-year-old cypress and the wooden ornaments on the wall were handmade by a famous carpenter in Nara. Traditional Edomae sushi is made with seasonal seafood and vegetables from Japan. Only the best rice, marinated with red or white vinegar, makes it to the counter. Even the sauces are shipped from their flagship store in Japan to maintain consistency. The omakase menu is recommended." - Michelin Inspector

The MICHELIN Guide to Dining in Bangkok’s Pathumwan District

"Centrally located in the Erawan mall, this sushi restaurant belongs to a group that started in Tokyo and now has branches in Jakarta and Singapore. To maintain the quality, produce is delivered straight from markets in Tokyo every 24 hours. There are two dining rooms with counter seating, so every customer gets a bird's-eye view of the chefs in action. Of the four set menus, the Botan and Omakase are the most popular. Service is charming." - Rachel Tan

Celebrated my wife's birthday and went for Botan set for both of us. Made a reservation online before coming down. We don't have Omakase often, usually for special occasions so I'm conditioned to eating Sushi with chopsticks. But eventually I was reminded by my wife on the correct way of enjoying the Sushi with our hands, instead of using their disposable chopsticks haha Food taste and quality were great, from the appetiser down to even the tea that came with the dessert impresses! Service was also great and overall indeed worthy of it's Michelin star. We were also pleasantly surprised with a special slice of cake on top of the dessert, a gift and a photo memento for my wife. Special shout-out to Chef Yoshi-san and Reika-san for such a warm and wonderful lunch 👍🏻🙏🏻

Ginza Sushi Ichi truly deserves its Michelin star. Food and ambience were top notch while the Japanese sushi chef put on an amazing display of professionalism in his sushi presentation. The Omakase set with its wide variety of imported seafood will delight all sushi lovers! My favourite is the soft shell crab eaten whole in one morsel. Yummy!

Delicate (Sensai) Edomae sushi. Omakase with only the freshest seasonal produce. March is always a good time as it brings the spring bounty of hotaru Ika, kasugodai (young sea bream), bamboo shoots and sakura trout. Aburi toro cheek was hands-down the best bite. Wide selection of sake, good focus on Tohoku, especially Miyagi (master chef is from this prefecture!). Lavish experience.

Food: Absolutely top-notch. The sashimi was incredibly fresh and definitely lived up to the one Michelin star hype. We left feeling completely satisfied and full. Service: Exceptional. The server kept refilling my ocha and thoughtfully explained the dishes while providing tips on how to enjoy them best, as the chef was Japanese. Despite the language barrier, the chef was very friendly, which added to the experience. They also surprised us with a special memento and gift for a birthday celebration, making it truly memorable. Highly recommend this place for special occasions!

We had the Nigiri Omakase for lunch. The standouts were definitely the Aburi Ootoro which added a layer smokiness and dimension to cut through the fattiness of the tuna. Compared to the likes of Shinji and other popular omakases in town, the flavour of the different components like the yuzu zest, red vinegar and wasabi were not too overpowering, allowing the flavour of the fish to really shine through. We also enjoyed the quieter ambience of the place. A big bonus is that the staff don’t sing happy birthday which came as a big relief to my husband (haha!). That said, we loved that they celebrated the occasion with the candles, a hand written card with a printed photo of us, a mini tea gift which was surprisingly our favourite tea brand (maruyama nori) from Japan! We also liked that they switched to Hojicha during dessert, which helped to offset the very sweet but delicious kyoho grapes and melon that we had. The only letdown was ironically the green tea they served during service. It tasted watered down and it lacked umami!

I don’t go to Omakase often but I feel they lived up to the expectations of Michelin 1 star. We went for the Botan Lunch Menu on a weekend. Great service and dining experience. Food quality is definitely high standard. Warm towels were provided, hot tea was changed from time to time to ensure optimal temperature. Because it’s counter seats, so you get to watch how the chef prepare your food. Chef Takeshi-san was very focused on his preparation and the staff - Joy and Justea were friendly. Had a birthday celebration there and they were very thoughtful to give us a mini surprise (shall not spoil the surprise but it’s a nice gesture from the restaurant). Thank you!

We had omakase lunch on weekend. Food, atmosphere, service - all are up to the Michelle 1 star standard. Worth a visit if you wanna enjoy a pleasant omakase experience!

We were the first to be seated at the restaurant when we arrived and it was awfully quiet. The chef didn’t small talk with us and hence the awkward silence. In fact, he didn’t engage much with us over the course of the meal which I thought was missing from a typical Omakase experience. Food wise, it was of good quality and I can understand why they got the 1 michelin star. From the whole course, nothing really blew my mind. It was simply good quality Japanese food. Overall, I’m not sure if I would return because something seems to be missing from the experience.

Yelp
The restaurant was located next to GINZA Sushi-ichi, which is awarded 1 Michelin Star in the Singapore Michelin Guide 2017 and 2016. The restaurant was opened due to a collaboration with Suigei Shuzo from Kouchi province. The lunch menu was limited to 5 choices and each was limited to 5 sets per day. But that very day when I visited the place, there was only 2 choices left. I was served hot ocha and hot towel after placing my order. Lunch Ootoro Katsu Set ($36++) Deep fried OOTORO, Small dish,Small vegetable, rice, oshinko, miso soup and dessert Although deep fried, the fatty tuna was still pink and moist in the center. It was served with tonkatsu sauce, salt, mustard and lemon. Best eaten with a squeeze of lemon juice and some salt which would enhance the flavour of the fish. The miso soup was rich and flavourful. As for side dishes, there was shredded seaweed and shellfish. The meal ended with a cup of soya milk pudding topped with matcha sauce which was rich and milky.
