"I trace many Portland bikini barista carts back to Girls Next Door Espresso, founded in 2019 by Caprice Gauthier when she was 20 as an attempt to run a stand more ethically and professionally; her approach became a blueprint that spawned other carts like Beans and Buns, Top Off, and Temptations. Gauthier’s cart — which I visited near North Lombard and Northeast 82nd — draws a seemingly unending line of mostly middle-aged blue-collar regulars, and she emphasizes worker safety and fair policies: she checks in on staff, limits shifts to prevent burnout, allows employees to smoke or drink if it helps them cope, requires staff to post on Instagram during shifts per the employee contract, and keeps security measures (bat, bear spray, camera feeds and even a spiked fence) to deter threats." - Eater
