As he visits producers, the chef dreams up menu items based on the vegetables he sees harvested. Among his creations are ohitashi and deep-fried dishes, vibrant and flavoursome from their fresh-picked ingredients. Beef and chicken are sourced directly from livestock farmers; sake, miso and soy sauce are the pride of the region. "Gojo vegetables are the main ingredient here – Akihito Nakatani has built relationships with nearby farmers and carries a wide variety, from traditional to Western. He picks the vegetables together with the producers and comes up with his ideas while talking with them. He also incorporates items of local culture such as local soy sauce, miso and sake. Delicious and unique vegetable dishes that are totally worth a trip to this tiny town. The owner is really friendly, explains the dishes, and is accommodating of vegetarians (I emailed ahead to make a reservation and let them know I was vegetarian, so no fish sauce, etc). Not possible these days, but I wish I could go back!

Incredible! One of our favorite restaurants in all of Japan. We were traveling Japan for three months researching food and beverages. Gojo Genbei is a true gem with an outstanding menu and impeccable service. I am still dreaming about the strawberry and shiitake and kudzu yuzu dessert and persimmon wine. If you don't visit here during your visit to Nara prefecture, you will surely be missing out on something special.

奈良五條的源兵衛是一場令人難忘的晚餐體驗。料理長親自解說每道料理的原料,許多來自當地小農與野菜,風味自然純粹。熟成石雕魚香甜淡雅,蔬菜炸物鮮甜到令人驚艷,沙拉展現了日本才有的細膩。主菜奈良牛油脂豐富卻毫不膩口,而不吃牛的我也吃到鮮美的魚肉與魚卵煮物。主食的竹筒飯讓整餐多了一份自然與溫潤。最後以葛粉甜點搭配醃漬櫻花,是最美的結束。更何況價格實惠到不像 Fine Dining,真心希望能看到中谷先生實現米其林一星的目標! 奈良・五條の「源兵衛」での夕食は、忘れられない素晴らしい体験でした。料理長が一品一品の食材について丁寧に説明してくださり、多くは地元の小規模農家や野菜から仕入れたもので、味わいは自然で純粋そのもの。 熟成された石鯛は香り高く上品な甘みがあり、野菜の天ぷらは素材の甘さが際立ち、驚くほど美味しかったです。サラダには日本らしい繊細さが感じられました。 メインの奈良牛は脂がしっかり乗っているのに重くなく、牛肉を食べない私でも、魚や魚卵の煮物でしっかりと旨味を堪能できました。主食の竹筒ご飯は、料理全体に自然と温もりを添えてくれます。 最後は葛粉のデザートに漬け桜を添えた一皿で締めくくられ、美しい余韻を残しました。 しかも、これほどの内容でありながら、まさかの良心的な価格。Fine Diningとは思えないほどのお値打ちです。 中谷さんがいつかミシュラン一つ星を獲得される日が来ることを、心から願っています!

太令人驚艷的一個地方! 能夠來到店家真的是因緣,跟老闆了解後才知道每日招待人數有限,午餐和晚餐都採預約制。 是鄉下偏僻的地方,但是料理師的廚藝不輸給市區的料理師!太讚! 只能評分五分太少,超過10分!!太讚了! 食物都採原形食物,料理太精湛!讚嘆讚嘆!
