Recipe:
Sustainably farmed or wild salmon
1/2 cup of bread crumbs
1/2 cup of shredded Parmesan
2 Tablespoons of Gotham Green's Pesto
Steps:
Pre-heat oven to 325 degrees
Place salmon on EVOO greased pan
Spoon 2 tablespoons of Gotham Green's Pesto onto the salmon
Mix your Parmesan & breadcrumbs into a mixture & gently press onto the salmon
Bake salmon in the oven for 12-15 minutes until medium rare
Broil on high for 1 minute. You want to watch this carefully so the top is perfectly brown

Salmon is a staple in our home & one of my favorite foods. When curating this recipe, I wanted to keep the ingredients list down to a minimum for a quick & easy week night dinner OR an easily scalable entree for a dinner party. They key here is Gotham Green's Pesto - Gotham Greens is a sustainable & global pioneer of of urban agriculture. They are based in NYC & produce local herbs & veggies year round in their greenhouse.
What I love the most about Gotham Greens is that compared to conventional farms, Gotham Greens uses 95% less water and 97% less land than most farmers. Because they use less space to grow, they are protecting biodiversity of the our ecosystem & leave no negative impact on precious soil. Additionally, their ability to leverage 95% less water through hydroponics (the most water-efficient form of agriculture) means that they have zero runoff.
