After the first bite of pizza from Grazie Grazie, I had one of those reactions that left me in awe thinking about what I just ate. When eaten fresh (within 10 minutes of receiving) it is one of the best pizzas I've had in a while.
I work at a restaurant that serves pizza so I know that stretching the perfect pizza is an art form. If you stretch it too thin, the toppings will slide off in the center and you'll have a soggy pizza. The dough here is fantastic and maintained its integrity.
Amatriciana: Classic pizza topping fare with tomato sauce base, cheese, and a salted/cured meat product. They used thinly sliced guanciale and I wish there was more on there because the guanciale was thin, crispy, and meaty giving me that perfect bacony sensation. I decided to add on jalapeño and spicy salami. The tomato sauce was a bit heavy for my liking and all the sauce soaked into the bottom crust and made the entire thing soggy after 5 minutes. So, it's only best eaten right away or I'd maybe ask for light sauce next time! (3.8/5)
Bianco Verde: This was a surprise to me with how the flavors came together. I added prosciutto to mine and it was definitely the right move. Without it, I may have found it boring after a few bites. The slight salty and meaty bite made me going in for more. On its own, it's a good pizza but I might have wanted a bit more honey. I didn't taste any sauce used a base and think it was just cheese? The pesto was delightful and contributed a herbaceous, peppery bite to contrast the smooth creaminess of the ricotta. The few bites where I could taste the honey were my favorite as it balanced the sweet, savory, and creamy notes. I believe the prosciutto is sliced to order, so that made a huge difference that I could tell from the pre sliced variety. (4/5)
The Crust: Again, when eaten as fresh as possible, it finds its way into one of the top spots for me. The dough was airy, crispy, chewy, and held its shape for the most part even when the tomato sauce made it soggy.
Chocolate Chip Cookie: If the cookie was warmed up so that it was soft and gooey, it would be an absolute banger. As is, it's still a damn good chocolate chip cookie. Bit of finishing salt on top was perfect as some places over do it. It's a soft cookie and slightly underbaked so you get the satisfying cookie dough sensation. Definitely interested to try the gelatos they have next.
I wish it wasn't so far from me, but I definitely see myself coming back. The ocean view on the drive there will keep me content and make the drive worth it.
