"Conceived as a follow-up project by Bailey and Morisano, this limited-capacity hybrid combines a Southern lunch counter and a New York–style bodega, offering a “come as you are, for anything you need” spirit with items ranging from toothpaste and paper towels to rotisserie chicken, bagels, kombucha, boxed pasta, and sandwiches inspired by the original restaurant’s menu. Designed by Parts and Labor Design, it aims to serve downtown residents and workers who lack a nearby convenience store while making the chef’s cooking more accessible through grab-and-go offerings such as seafood boudin po’ boys, rare roast beef sandwiches, and a curry chicken salad riff on the kitchen’s Chicken Country Captain. An upstairs production kitchen led by baker Matt Molinari will produce bagels and breads for this venue and other local restaurants, and the team plans a shippable product line (including comeback sauce and Chickasaw plum jam), merchandise, and future catering; the project also intentionally reclaims the historically segregated lunch counter format as an inclusive community resource." - Monica Burton
