We tried the degustation menus at Guze Bistro — “Sea” for my girlfriend and “Land” for myself. Overall, it was a pleasant and well structured dining experience. The amuse-bouches were decent, followed by the first starters: Sea Bass for the Sea menu and Lasagne for the Land. Both were fine, though not particularly memorable. The real highlights of the evening were definitely the pasta courses — Grey Mullet Bottarga and Black Pig. Both were full of flavor and easily the stars of the table. For the main courses, we had meagre and rabbit. While both were well executed, we personally enjoyed the meagre more. The meal ended nicely with the Dessert Trio, which was a thoughtful and satisfying finish. A good experience overall, with some standout dishes and a few courses that could be elevated further.

We visited Guze on our first night in Malta and it did not disappoint. Before the starters arrived, we were served complimentary bread with tomato paste that tasted deliciously fresh. For our starters we ordered the black pig pappardale and the barraga pasta. The portions were generous and the quality of the food was superb. For our mains we ordered the rabbit and pork belly. Although we were impressed by the standard of the food, the mains felt too rich to finish, and unfortunately we had to leave some of it behind. The only aspect we felt could be improved was the service: although the waiters were attentive, each course took a while to arrive. Overall, we were very impressed with our meal at Guze and would recommend it to anyone who would like to try some of Valetta's specialties without breaking the bank.

What an amazing place, a great way to end our day in Valetta. Tucked away on the corner of a street just off the main thoroughfare of Republic St, you go down into the restaurant and almost back in time, a very nostalgic, quaint, intimate setting. We booked and good thing too with only 5 tables. But the food was incredible, service excellent and a truly great experience. The Octopus starter was exceptionally good.

A wonderful experience, we enjoyed a fantastic dinner here, gorgeous food, incredibly friendly and welcoming service, in a lovely old building. Can highly recommend the black pig and the rabbit. And the local wine!

Lovely little restaurant with spirit in heart of Valeta. Amazing experience; tried tasting menu with wine pairing. Recommend as you'll try many typical dishes, well done prepared and delicious. Staff very friendly and attentive. Pasta dishes delicious, the fish as well, rabbit was also the same level. It's expensive but if you want to treat yourself, good choice.
