"One of Hamburg's classic hotels, the legendary Fairmont Hotel Vier Jahreszeiten with its view of the Inner Alster Lake, is home to this stylishly elegant restaurant. The top-notch cuisine is inextricably linked with the name Christoph Rüffer, who has been the chef here for over 20 years. His dishes follow a clear idea and retain their identity despite considerable technicality. He showcases the ingredients and incorporates meaningful contrasts with minimal fuss. The set menu comprises six fantastic courses – think saddle of venison with Hamburger Speck (cured pork belly), beetroot, balsamic cherries and smoked pistachio cream, which combines aromatic and sweet fruity notes with the fantastic flavour of this game meat. There are also several dishes to swap out or add on. Proficient service comes from a classic brigade. Outstanding wine list; the wine pairings for the set menu come highly recommended. For a little luxury… world-class wines are also served by the glass." - Michelin Inspector

Three-MICHELIN-Star Haerlin and Tohru: The Inspectors’ View

"Recognized as Germany's latest Three-MICHELIN-Star restaurant, Haerlin in Hamburg has propelled chef Christoph Rüffer to the dizziest heights of the profession. We examined the Inspectors’ reports and, on the eve of the awarding of the new Stars, spoke to two of the ten Inspectors who were in Hamburg during the last editorial year; both have eaten at Haerlin several times in recent years and gave us their personal perspective on how the restaurant evolved to reach Three‑Star level." - Le Guide MICHELIN

The MICHELIN Guide Germany 2025 is Out!

"Added to the 2025 MICHELIN Guide as a new three-star restaurant, the Haerlin in Hamburg becomes one of Germany's twelve 3-star establishments; I view its elevation as part of the inspectors' tribute to local restaurateurs for their consistent high quality, creativity and passion, their guest-focused approach, and the broader trends the guide highlights such as plant-based cuisine, regionality and seasonality." - Le Guide MICHELIN

When food becomes art! I’d dreamed of visiting this place for a long time, and the day finally arrived. Everything was fantastic — not overly snobbish, but luxurious with a personal touch. We started in the kitchen with a glass of wine and a few snacks; I’ve rarely seen such a calm kitchen, and it was obvious that every detail was under control. After that, we moved up to the beautiful dining room, where we were spoiled for the next four hours. It’s an experience you owe yourself at least once in your life. It’s not cheap, but the price matches the quality, and the memory is worth it. I already know I’ll be coming back for another one.

This is the 2nd time coming to Haerlin, now after they were awarded their 3rd star and I enjoyed it as much as the first time. I had the "Via Coravin" wine accompaniment, something I regularly do in order to discover new wines. As we were three persons we each also ordered a different one of the optional "supplements". From beginning to end this is what to expect of a good 3 star restaurant. Service was excellent, dishes were beautifully arranged and presented, and tasted delicious. Maybe because it was at the beginning but the amouse-bouches were simply devine. The evening proceeded at a liesurely pace with none of the unacceptable rush one is finding in some 3 star places like "Chef's Table at Brooklyn Fare" with its 2 nightly seatings. As it was getting late with an elderly person, we took the petit fours home with us, hence the boxes. The whole evening was well worth it. I/we will return once the menu has changed.

Haerlin is the best restaurant I have ever tried. It far, far exceeds the quality of other three star places I have tried with fairly reasonable prices for fine dining. I especially appreciated starting with appetizers in the kitchen and getting an intimate view of the action. Only one minor quibble- sometimes, the staff was too soft spoken or unclear in English so I had to strain to understand. But I consider that my fault for not being better at German.

One of our best dining experiences ever. Memorable food prepared with care, served professionally resulting in incredible tastes. Expensive but worth it. Expect a 4+ hour delicious and delightful dinner. (AI not employed in this review).

We went for our 10th wedding anniversary. The restaurant team decorated our table with rose pedals giving it a nice touch. Both of us opted for the big menu without the wine pairing. The starters soon arrived and we were immersed into a wonderfully detailed culinary experience. I loved the scallop, duck liver and truffle dish. An unexpected combination in tastes which surprised me. I also want to mention the deserts which were an absolute delight. The only wish I would have had, is to have the same people looking after us. I think we had 3 different people serving the table. But this is just a minor detail. Overall it was an absolutely amazing foodie experience.

Wonderful experience. I enjoyed the wine pairing, and the dishes were excellent. We had a small issue on our first course, but the entire experience was well worth it.

Loved this place! Excellent service, excellent food. If you are visiting anywhere in Germany you must visit one of their franchises. Absolutely top drawer!

Yelp
I know we have the French Laundry in California and are terribly spoiled, but the food at this restaurant was a 4. The service started out great and deteriorated to unacceptable over the evening, so I would put that at a 3. When they served one of our party the wrong dessert, instead of apologizing and offering to serve the correct dessert, she said "the other dessert is basically the same, just black currant vs strawberry." what the heck?! we said, that was fine, that they could make up the mistake on our petit fors that we were getting to go (because we were too full). They gave us the petit fors to go, but did not include anything extra. We paid for accompany wine and no dessert wine was served. They did not offer coffee or any other options at the end of the meal. We have received expected service at other restaurants in Germany, so I don't understand. $511 euros for a dinner should get exceptional service. Boo to the Haerlin!

Yelp
I visit this restaurant for over 10 years and it is a heavan of indulgence for those who go for spectacular view, impeccable service and the best food you can get in this town. Diners can choose between different set menues, parts of it and a small extra menue of dishes all pleasing the palate. The vast wine-cellar is stocked with very rare blobs but its even more fun if you entrust the sommelier to take you on a trip around his vast knowledge of wines from around the world all served by the glass and fitting to the plates you have chosen. Don't miss the adjacent cosy Hotel Bar for the nightcap. BEWARE: the water depth of the inner Alster Lake opposite the hotel is only 6 foot, there is no possibility for drowning after the bill is cleared!
