"What's this place all about? It's a next-generation bolthole making a destination of this sleepy New South Wales surf town. At this motel-turned-boutique-hotel just north of Byron Bay, the mood-board is mid-century, Slim Aarons glamour. Bronzed pool boys in white uniforms serve artisan-gin cocktails to guests in big sun hats and designer togs, the breeze from Cabarita Beach rustling the pandanus trees on the lawn. Blue-and-white interiors are exuberant (nothing nautical-twee here) and new-school Aussie. So how did this place come to be? Cabarita Beach is one of New South Wales’ last sleepy surf towns. When sisters Siobhan and Elisha Bickle bought the dilapidated Hideaway Motel, a small surf lodge, in 2011, they intended to turn the place into a holiday home for their families. But then they fell for the idea of creating the prettiest little seaside hotel, and drafted in architect Virginia Kerridge and Brisbane interior designer Anna Spiro to help—and by 2015 Halcyon House was just that. What are the rooms like? Each of the 21 rooms is different, showcasing Spiro’s whimsical eclecticism: bold pattern on upholstered walls, mismatched artworks and antiques collected by Spiro and the Bickle sisters on their travels. Bathrooms are want-it dreamy: Mediterranean tiles, brass fixtures, a shower big enough to lay down in. The two-bedroom two-bathroom Halcyon Suite is like having your own Australian beach house. Once we've checked in and settled in our room, we're probably going to be a bit peckish. Have they got us covered? Former Noma chef Ben Devlin heads up the restaurant, Paper Daisy. Smoky paperbark-roasted fish is served with sugarloaf, potatoes and kelp, a theatrical fresh take on a classic campfire supper, while the prawn sandwich is a wonderful interpretation of the Aussie favorite, made with brioche and avocado. How's the service? Mauro De Riso, the general manager who infuses the air with his Italian charm and sense of generosity, is one of the Bickles’s best investments. Who are we likely to see in the lobby and adjacent suites? A sunshine-loving crowd of upfront Sydneysiders and lucky travelers. Everyone comes together for evening drinks on the deck to a chilled Café del Mar-style soundtrack. What's the surrounding area like? What should we be sure to check out? The village of Cabarita hasn’t quite caught up with its luxe new addition, but in many ways that’s part of its charm, only really waking up with the arrival of summer. Byron Bay is half an hour away (borrow an Audi from the hotel), where some of the hottest names in Australian food are making their mark—ask the concierge to book you in to Fleet or Harvest. Are there any particular facilities that will make our stay more comfortable? The new day spa, with its domed, hammam-style steam room, completes the picture. The bikes are cool, too, for exploring beyond the beach. So if you were to describe this place in just a few words, what would you say? The kind of place you dream about on a dark winter’s day. It's been a moment between drinks (and nibbles) at Paper Daisy due to the previously imposed set menus/courses and what seemed like fairly limited offerings on said menus (for us anyway - each to their own of course). It was a gamble to revisit but it paid off in dividends. The setting was fabulous, the ambience for a coastal relaxed dress up or dress down (as you may)lunch just superb and the food - elegant, extremely tasty and beautifully presented without the slight pretentiousness we'd experienced previously. The service was generally exceptional though the first drinks order was a little slow and drinks generally slow to arrive once ordered but never the less the setting was such that you didn't mind waiting a few extra (maybe longer) minutes for drinks to arrive. It reminded us of the Bahamas (one and only) and that's a compliment indeed. Beautiful decor and a slight breeze the entire time. It's a great lunch vibe. Thanks to the entire team - it's definitely the pick of the spots in this area (I'd say Burleigh to Byron) - and we will definitely be back. Highly recommended. Well done to all.

If I could give more stars, I would and absolutely amazing stay. I’ve always wanted to stay here, and it exceeded my expectations. All the small details from the welcome drink through to the small cake we found in our room, the turn down service and even while lying by the pool in the afternoon, they came around and offered complementary gelato to everyone. The next day we didn’t feel like leaving until later, so we were able to use all of the facilities after checkout, which made such a nice difference and even were able to use the showers and bathrooms. The restaurant paper daisy is also amazing and had an amazing dinner there . I cannot recommend this hotel enough. it was very special and I cannot wait to come back

We had a beautiful lunch today at Paper Daisy. Food was fabulous, cocktails delightful but most of all we were enamoured by Mia (the Manager). Mia was very attentive, well informed and a breath of fresh air. She certainly ensured that were well taken care of. Would recommend this restaurant to anyone.

I recently spent a day at Halcyon House in Cabarita Beach and had a truly wonderful experience! The rooms were beautifully designed, each one unique, with stylish colours, tailored artwork on the walls, and a real homely feel. The facilities were excellent, with bikes and surfboards to use, and the customer service throughout the hotel was warm, attentive, and professional - second to none!. They really added such memorable personal touches all throughout my stay. And the beachside views are spectacular! I also ate both lunch and dinner at Paper Daisy, the hotel’s restaurant, and the food was outstanding. Lunch was fresh flavorful and enjoyed a three-course dinner with matching wines as well! It was a real highlight—beautifully prepared and perfectly paired. Would highly recommend a lengthy stay at Halcyon House and look forward to returning myself.

Halcyon House is absolutely stunning! Stayed here recently for work function. The location right on Cabarita Beach is unbeatable — waking up and being able to stroll straight onto the sand what is an awesome beach. The food at Paper Daisy was exceptional — fresh, seasonal, and full of flavour. Breakfast was a highlight, but every meal we had was spot on and couldn't fault. But also a great spot to have a sophisticated evening drink with your partner or friends. Looking forward to coming back here!

Luxurious, but friendly and relaxed. The room had more than I expected in its design, fittings and furnishings. The room serviced and then prepared for your retiring after your event meal. Beach at your back door, pool on-site beside dining area. Menu varied and prepared to perfection.

We had the pleasure of staying in a Master Room for 2 nights & it was absolutely delightful! The decor is eclectic but so tastefully done. The service from the reception staff is incredible, just couldn’t fault it if I tried! Although there’s not a “pillow menu” as such, they do have options for different bedding (the doona was far too hot for us) & pillows so be sure to ask for that. Our experience at Paper Daisy wasn’t as great, sadly, the service doesn’t match that of reception & our breakfast on our first morning wasn’t to our order specification, and really slow. By the time it arrived we couldn’t be bothered sending it back to have it fixed. Dinner was beautiful, with great cocktails, but again, the service was lacking & we waited an hour for our mains. When I go back to stay (which I most certainly will), I think we’ll have breakfast elsewhere, then it will be perfect.
