Hell's Kitchen has been really representing on the NYC omakase scene and even among stars, this place shines above the rest. WOW wow WOW where do I begin. They've been open for 3 weeks since Sept 16 and if you're an omakase fan you better run here now before seats get too hard to snag. While billed as another "affordable omakase" spot, this place is the real deal in terms of sushi-making pedigree and creativity (Sushi Yasuda, Sushi Noz). It's hard to tell from photos, but there's an element of thoughtfulness and technique to their sushi flavor pairings indicating research went into designing the profile of each bite.
Chef Yousi, Chef Ryan and front of house Enrique--you guys are serving up something extra special! If I could give 7 stars I would! The sushi flavors and techniques speak volumes for themselves, and your hospitality is on point.
I arrived one very rainy Sunday evening for the second seating at 6:15pm and was surprised to see only 3 parties total, the space is simple, with a muted color scheme in the style of Japanese sushi restaurants, though they've added some tasteful touches like cherry blossoms murals on the wall decor. About 20 seats around a rectangular sushi bar, serviced by two chefs. I'm kinda glad it rained since we had prob more of a personalized touch and chance to chat with the team one on one, and appreciated their openness to chat with us!
Ok getting to the food - 13 course omakase over 75 minutes for $75. For menu see my pic! They get all their fish from Japan, which is super unique at this price point.
- Rice: well seasoned and properly cooked, each grain held its own. This place leans towards modern sushi flavors so take this into account if you're a purist, however it's in line with the newer sushi scene in Japan these days. Some pieces are have a light sauce so that caused some grains to fall off here and there though I wasn't angry about it.
- Scallop: gently seared with butter ugh...so tender and fresh. One of my favorites, honestly it was really hard to choose favorites here.
- Yellowtail: stronger wasabi flavor I enjoyed the kick though.
- King salmon: smoked with what (to me) tasted like a bit of paprika seasoning on the exterior, really delectable.
-Sea bream: a meatier fish with more of a bite, so good. Nice savory elements.
- Botan ebi with foie gras: melt in your mouth, the shrimp was so fresh and juicy, foie gras added a lovely richness.
- Shima aji: comforting savory mushroom (?) flavor, though my friend thought it was more a sautéed mustard green flavor.
- Lean tuna: soy sauce forward, enjoyed it!
- Chu/otoro with caviar: you can't really go wrong with any variety of this anywhere, so tender and melt-in-your mouth with a touch of brininess from the caviar.
- Spanish mackerel: slightly seared with ginger, also basically falls apart in your mouth, a lighter flavor, yummmm.
- Hokkaido uni: sweet unctuous uni. Crisp nori exterior. Perfection.
- A5 Wagyu: so tender, probably the best rendition of this I've ever eaten in NYC, and that's saying a lot. There's a bit of grill flavor they managed to impart with the deep fried pork floss (did I hear that right?) they sprinkle generously on top.
- Unagi: delicious, melt-in-your mouth just the right amount of sauce.
- Negitoro roll: not bad, more of a lighter roll with some crunch from the pickled radish to end your meal.
We ended up getting extra pieces of the scallop, botan ebi with foie gras and the shima aji, plus a unique red snapper/sea bream take recommended by Chef Ryan. All so delightful =9
One of the most amusing parts of the meal was actually watching the expressions on other diners faces as they were eating the sushi. lol their expressions! And probably mine too, hilarious. Like after a bite, you could see eyes widening, these expressions of surprise and joy, sometimes eyes closing. One customer put his head down onto the table and couldn't look up for a while, then declared the king salmon the tastiest piece of smoked salmon he'd ever eaten. You could tell everyone was enjoying their nigiri immensely.
