This was our first time coming here and it had been the best sushi experience we've had yet. Service was excellent and the food was amazing! The fish was very fresh and there was a variety of sushi to choose from. Can't wait to come back again and try more of the specials. We recommend coming at least 30 minutes before opening to guarantee a seat right when they open.

This place is amazing - each piece was SO good and this is definitely up there in omakases, especially in Ft. Worth. We ordered a lot of sushi, so I won’t list them, but all of them were good. I especially enjoyed the Scallop and Salmon Belly pieces. But all of them were so good - it’s honestly worth the price (total for two came out to $240 after tax and tip). Would 100% go again, definitely the best spot for a special occasion in Ft. Worth.

Top 3 best sushi I've ever had. For two, expect to pay $50-60 each and walk away absolutely stuffed. My wife's favorite was the salmon sashimi with truffle ponzu and the spicy tuna with shrimp katsu hand roll. My favorite was the akami zuke and the unister. The unister was the most expensive thing we ordered coming in at $18 but it was worth it... Uni, ikura, oyster with 24k gold flakes. An $18 bite but man was that good. The fishy oyster, then the savory uni, and finally the umami from the bursting ikura. Nothing fishy by the end of the bite. The hand rolls are delicious with crispy seaweed - something I've never experienced, usually the seaweed is already absorbing the moisture from the rice and sashimi and you can't truly enjoy the crisp nori flavor. The salmon belly is also noteworthy and the crab hand roll was delicious with actual crab, not just imitation. Lastly, get there early. We arrived 40 minutes before opening and we're numbers 5 and 6 in line. By the time opening came, there were 30 people in line with only 25 seats at the bar available. Umai!

The sushi was pretty good for the price, but we ended up waiting nearly two hours to get seated because we arrived during the busiest time. If you don't like waiting, I highly recommend avoiding peak hours. The friend I went with thought this restaurant was only in Fort Worth and didn't realize they had opened a location in Dallas as well. So we decided to eat here while sightseeing, thinking it was a Fort Worth exclusive. That was our mistake. We also didn't know about the parking situation ahead of time and paid to park in the nearby parking deck. Once we got inside, we found out there is a QR code at the entrance that lets you park for free in the lot right in front of the restaurant. Since we waited two hours anyway, we used up our paid parking time and then moved the car to the lot to use the free QR code parking during the meal. I ordered the combo handroll set, which should have included a salmon handroll, but the chef at our table forgot to serve it. I had to ask, and after a bit of a wait, I finally got it. Other than that, everything was good. Just make sure not to miss the free parking QR code!

How can you not rate this at 5 star. The experience overall was superb. Not a major wait time. Personalized sushi chef serving up succulent treats. The freshness, the exotic selection, the robust sake menu. I could visit such a place everyday. The red snapper sashimi and Spanish mackerel sushi were standouts. Of course the rolls are out of this world. Will 10/10 come back when I’m back in town. Alas I’m just a tourist who must return to my small hometown where such quality doesn’t exist. Oh well.

Very nice. Very nice. The quality of the ingredients is top notch. The skill in preparation is fantastic. The chefs are very attentive; only delivering your next order once you have finished your current sushi so it's as fresh as possible. The wait staff is great as well. Get there at open as the restaurant only seats 25 at a time, or be prepared to wait. The wait would be worth it though, for sure. Tasting top: if you are a fan of salmon belly I highly suggest you try the black cod. Prepared the same way, it's like salmon belly stepped up a notch. Enjoy!

Wow! Every bite was perfection. The fish was fresh and so flavorful. We made it easy and went with Omakase and were not disappointed. Every time we thought we had a favorite, the next item would be just as good. Check Instagram stories for their daily menu to think through what you want to get. Hatsuyuki offers fresh, top notch sashimi, sushi, and hand rolls. We walked in around 6pm on a Friday night. We were told a current 2 hr wait. We placed our names on the list, and were seated around 8pm. The food quality and freshness are worth every minute of the wait. With authentic atmosphere of Hatsuyuki and high quality food, we will definitely return.

Easily the best sushi bar in Fort Worth for the connoisseur. Many offerings to include some exotic ones. Their baseline hand rolls are OK but I would spend time with their nigiri and their other creations. My go to sushi bar in Fort Worth.

A hand roll shop in Fort Worth, with only a circle of seats similar to a bar (about 30 single seats), the chef is busy in the middle. Eat one dish after another, similar to the Omakase format. There are two menus, one is a double-page printed paper, mainly with various combinations of hand rolls (Figure 5), and the back is drinks; the other is a small blackboard on the left wall (Figure 6), with various high-end ingredients and designed nigiri sushi, which will be updated frequently, mainly based on the version in the store. Business hours are basically 11am-2:30pm, and then continue at 5pm. I went there on Saturday at noon and waited for more than half an hour. The hand roll combo is normal. We ordered more varieties. The chef will split each one into two, so you can taste all kinds of flavors. And the chef will help you arrange the dishes and positions when he sees that you want to take pictures. Needless to say, the ones on the small blackboard, just go for it if you have a budget. Unister When the chef was busy arranging the dishes, he didn't know we ordered it. Finally, he took out gold foil from a small box, and then he reacted. The combination of sea urchin + fish roe is so fresh. With chopped green onions and gold foil, the shape is much more beautiful. Scallop with Chopped Toro Scallop meat + toro with a small leaf on top, super cute. The meat is sweet and tender, and the small leaf has a bit of spicy taste. Salmon Belly When I was almost done eating and full, the chef strongly recommended this, saying that every table must order it, so I agreed to try it. Then the chef started to cut the meat and grilled it with a blowtorch for a few seconds. Because it is the belly of the fish, plus the grilling, the fat is very rich. The taste is basically the freshness of the fish itself and the taste of grilled fat. Maybe because I was full and felt a little greasy, if I ate earlier, the experience should be better, after all, it is recommended by the chef + must-order for every table. In short, the cost of this meal depends on how many small blackboards are ordered, some of which cost more than ten dollars. I prefer this way of eating and serving dishes, so I won't be in a hurry to eat or wait for a long time for the dishes. The downside is that it's a bit far. I'll go there again if I have a chance.

I loved the sushi and sashimi so much during my last visit that I decided to order it again. This time, however, I opted for takeout since the restaurant was extremely busy. It was a Sunday evening and the place was packed. I got the same order of sushi roll, from most to least fav: salmon roll, yellowtail roll, crab roll and bay scallop roll and ofc my favorite salmon sashimi. I ordered the exact same thing I had while dining in, but to my surprise, the experience was completely different. The flavors just didn't hit the same way, and it ended up tasting like average sushi. I could barely finish it. I still do recommend this place, but for the best experience, definitely dine in or go for a lunch seating!

So many of my friends recommended I tried this place and it definitely did not disappoint. Everything is made right in front of you and the fish is so fresh. You can choose a set of handrolls, add a few on, and/or order some bites of nigiri on the side as well. My favorite was definitely the salmon belly. I love how torching the fish gives it a smokey flavor and the sauce strengthened the umami of the fish. I also got the hokkaido scallop which was sweet and creamy and very fresh. As for the handrolls, my favorite is definitely the salmon, followed by the yellowtail, then the crab, and then the scallop and the toro. The scallop handroll was a bit too heavy for my taste, and the toro handroll just wasn't anything outstanding. Service was great. Super attentive and the waiters were always around to add more to your order, refill your water, or answer any questions. It is also bar seating only so I would definitely try to get there at opening!

This is the best sushi/handroll spot in the DFW area. The fish is so fresh and tender, you can taste the quality. The service was amazing, very tentative and fast. You do have to wait for dinner (unsure about lunch, haven't been during those hours). There is usually a wait and unfortunately, no reservations so you just have to check in and wait for a spot to open. But they will text you. Inside is beautiful, very simple and clean. This is a must try for sushi lovers in the area!

10/10! Last time I was here, they sat me outside in the heat and I didn't enjoy it as much. Us gals had galentines here and the wait was an hour and half. We got there at 4:40pm and was seated at 6pm. We ordered a bunch, I didn't take pics of everything. I got four handrolls and a bunch of individual nigiri pieces. Everything was delicious! WHAT I ORDERED: 5 handroll combo, Ootoro, Hokkaido Scallop with Chop Toro, Gindara, Salmon with Truffle Ponzu PARKING: Limited parking lot that shares spots with the surrounding businesses. There is free validated parking but you need to scan the barcode INSIDE of the restaurant!!! If you use the barcode listed outside at the parking spot, it can no longer be validated and nothing the restaurant can do after the fact. INSIDE: There is a "Today's Specials" board on the wall but it's also posted everyday on their instagram account. Plan on a wait, even if you get there early. Went on a Sunday, got in line at 11:45am but already enough people in front of me where I would be in the next seating. I got on the waitlist at 11:57am and got a text saying a table is ready for me at 1:10pm. Used this time to get a coffee nearby. They don't take reservations and it's about 25 seats at the bar. Service was quick and it's fun watching the chefs prepare each roll/dish. Bathrooms available in the back right. THE FOODS/DRINKS: Expect to drop money but well worth! Everything tasted fresh and honestly, can't go wrong with anything you order. Had to refrain myself from ordering everything off of the specials menu. Out of the 5 handrolls, my favorites are the crab and scallop. The rice to fish portion is perfectly balanced.

Everyone I know who's ever visited Hatsuyuki only has the highest praises for this restaurant. And after trying it, I think it's fair to say it has lived up to the hype! I definitely recommend trying to get there a little before they open, because there's usually a line. We arrived about a half hour after they opened. And we were told the wait time would be around an hour. Luckily, there's a lot of shops around the area to walk around and spend the time. Parking isn't too hard to find as there's a lot out in front. But DO NOT SCAN AND PAY YET! If you go into the restaurant, they have a qr code for you to scan and validate your parking for up to 3 hours. If you've already paid outside, there's nothing they can do to help you. I will say, they only have one specials board, and depending on where you're seated, it can be a little hard to read. But I love the method of ordering, you just write in what you want on their paper menus. And they give it back to you once they put the order in, so you can also keep track of what you're eating and what you're still waiting on. The quality of all of the ingredients is pretty top tier, the fish is fresh, the wasabi is ground before your eyes, the rice is perfectly portioned and the perfect texture, etc. And the seaweed was so crisp and fresh too. Honestly, unless you're eating the handrolls, you really don't even need to pour any soy sauce out. Because they've already brushed the fish with the perfect amount of sauce. While I'm sure everything is good, the standout pieces for me outside of the classics like salmon and toro was Kanpachi with cherry blossom - it had a slight sweetness that was just so delicious Crab hand roll - I kind of just expected like imitation crab so maybe my expectations were just low, but I should have known better. Bay scallop hand roll - the scallops were honestly so juicy and flavorful.

There's a reason why this place has the perfect 5 star review. It may be called a handroll bar, but the real star here is the nigiri. There's a u shaped bar as you entire the space. Nice and well lit. With a lot of people working. All seats are filled with a small waiting area. I had so many different pieces of sushi here. But my favorites were the salmon belly nigiri, black cod nigiri, uni plus one nigiri, and the spicy tuna handroll. My goodness each piece of those just melted in my mouth. The textures were so beautiful. Visually stunning as well. The service was impeccable and well accommodating to my small children. Who loved the sushi as well. A must have in fort worth. Recommendation: salmon belly nigiri, black cod nigiri, uni plus one nigiri, and the spicy tuna handroll

You simply order off the board and the smoked salmon, takuan toro and black cod was all 10/10. Salmon ponzu dish was super fatty and melts in your month Tip: you can also order a handroll set and have the chef cut it in half if you wanted to share with someone

My friend hyped this place up so much and I had it bookmarked on yelp for a couple years... we finally went today. No reservations. I got there at 11:50 AM to get on the waitlist for lunch and it was about a 45 min wait. You're essentially seated around in a U-shape table with a chef designated to a section. We sat the closest to the specials menu board but plenty of people came to take pictures so they can order from their seats. You jot down what you want and the chefs will give you the items one at a time. The sushi is phenomenal and absolutely worth the price (because oh my god it's quite pricy lol). It genuinely is packed with flavor and just melts in your mouth. Even though you're all seated together with others, it didn't feel awkward because you're too busy enjoying your food and savoring every bite. There is a little hook to hang your purse or jacket under the table that I didn't know about so my purse was on the floor until a waitress pointed out the hook and hung my purse for me (whoops). The restrooms are single occupant ones and were clean. I think it's good if you go by yourself or with a friend or two... OR if you wanna go somewhere interesting and expensive for a date. Overall, really enjoyed it.

Hands down the freshest fish in Fort Worth. I've been here a few times and I can never complain. They don't accept reservations so you'll have to figure out when would be the best time to go. It's usually around 15 minutes before the hour. This place only has bar seating because they chefs are there preparing the handrolls and sushi/sashimi in front of you. I've had the handrolls here and the items on the specials board. You really can't go wrong with anything. Each chef prepares the dishes perfectly. Parking can be difficult here, but if you find a spot, don't scan the QR code in the parking lot! Scan the QR code inside the restaurant instead. You get free parking. Oh and for you ladies, there's a purse holder underneath the bar! Do not skip out on this place. It's a definite must on the Fort Worth foodie list.

And trust me, that's not something I say lightly. First things first, Chef Jun Mo Yeon is an absolute rockstar. His precision, creativity, and dedication to serving up the freshest and finest ingredients truly elevate the entire experience. Each visit feels like a personal performance, with him curating every bite to perfection. The Shima Aji (Striped Jack) is an absolute standout. The texture is silky smooth, and the flavor is so clean and fresh--it's as if the ocean kissed your taste buds. It's delicate, yet rich with subtle layers that unfold with every bite. Next, the Ama-Ebi (Spotted Prawn) is a revelation. You can taste the sweetness of the prawn, which just melts in your mouth. The slight briny note combined with Chef Jun's masterful handling creates something absolutely magical. The Hamachili--a fresh twist on the classic yellowtail--is another must-have. The balance of citrusy heat and buttery hamachi is simply sublime, a dish that will have you coming back for seconds (and thirds). Finally, the Hokkaido Scallop is a star of its own. These are some of the sweetest, plumpest scallops you'll find, and Chef Jun's attention to detail in their preparation lets their natural flavor shine through. It's tender, luxurious, and almost decadent. As a quick tip, I highly recommend arriving early. Hatsuyuki has limited seating, and it fills up fast, especially if you're with a larger group. When I'm solo, I usually get seated quickly without any issues. But if you're rolling with a crew, be prepared to wait--it's absolutely worth it. In short, Hatsuyuki Handroll Bar is not just a sushi spot; it's an experience. If you're a sushi lover, this place is a must. I hate to say that my favorite sushi place is located in Fort Worth, Texas, of all places. I haven't been able to look at sushi the same way since the first time I visited in May. We made sure to get there before the restaurant opened at 11AM. We arrived at about 10:45AM on 8/31/24. The line wasn't very long, and there weren't too many people in front of us either. As soon as they opened their doors, our group of two was seated immediately. We ordered 13 different items: - (2) Miso Soup - (5) Hand Roll Set (cut in half: bay scallop, crab, lobster, salmon, and tuna) - (2) Chutoro - (2) Ama Ebi (spotted prawn) - (2) Salmon Belly - (2) King Salmon (with truffle) - (2) Madai (red snapper) - Kanpachili - Chef's Special (wagyu, toro, uni, ikura, and ooba) Some of the items we originally wanted weren't available that day or ran out before we could order them. The chef who was preparing our food was very helpful in suggesting replacements for the unavailable items. The Chef's Special for the day wasn't going to be ready for another 30-60 minutes, but we were there long enough to order it before we were ready to leave! Our total was under $175 before tip.

Reallllly great spot for nigiri and handrolls with high quality fish that's perfect for a special occasion or treat yourself day! The menu changes each day based on what fresh fish is available. Seating is bar style and the rolls are made right in front of you and coursed out. We each ordered about 7-9 items each and miso soup and the total came out to about $200 which was expected. We weren't super full but at a good spot and the quality of the fish really did make the price tag feel worth it. : Salmon with truffle ponzu: This one was shareable as it came with 5 pieces and the salmon cuts were THICK which I loved. Hamachi: Also shareable and super tasty! Flounder: Never had this before, tasty but in an interesting way. Not sure if I would order again. Came with four pieces. Ootoro/Blue Fin Tuna: YES YOU MUST. Red Crab: Really good but I prefer the raw fish nigiri! Salmon belly: This one is SOOOO GOOD and also better bang for your buck so we got more of these. So so so yummy. Spicy tuna handroll with tempura: Big sized tempura which complimented the spicy tuna well. I wish I ordered more hand rolls. These were very tasty. You can tell each roll and piece of fish is just handled with so much care and delicacy. The chefs really take their time which is fun to also watch up close. I honestly was pleasantly surprised because I wasn't expecting such fresh and good fish when this part of Texas is so far from a body of water haha. Really great spot and highly recommend!

Top tier 1000000/10 fire emoji status. Service is always welcoming and friendly, they are knowledgeable of the menu and can suggest it all to your taste. They have a variety of sake to choose from and their specials are so delicious, my favorite go to is the torched salmon belly. I'm not a big fan of hand rolls since I'm more of a sashimi and nigiri girlie, so I haven't tried too many of those. The space is small with limited seating but I've never waited longer than 20 minutes. This place is a must!

Plenty of places nearby to chill while you wait. Our server helped us pick out several of the daily specials, and we also got the 5 hand rolls to share as well. Everything was outstanding. Another FANTASTIC meal at Hatsuyuki. I cannot sing this restaurant's praises high enough for the quality of their fish, the service, and overall experience. It's quiet, small, and a bit intimate, so not suitable for a large crowd. And BE EARLY, the first seating will be "sold out" by people in line 30 minutes prior to opening, even for lunch on a Sunday! Order off their Daily Specials menu for the best quality/variety (which changes frequently, so check their Instagram page before you go to see what's on the menu that day).

The FRESHEST fish you will ever get! We were told that a lot of their fish are imported straight from Japan and y'all the quality is there! We were not disappointed in absolutely anything we ordered. Everything was beautifully prepared and it was nice to have them make the hand rolls as you go, so the seaweed is still nice and crisp, and it's not just sitting there. We got the 5 Hand Roll Combo which comes 5 of the freshest hand rolls I have ever had! These included: - Yellow Tail which is my absolute favorite kind of fish for sushi. - Bay Scallop which would usually be my least favorite, but I promise y'all that this was so good. - Crab and this was so creamy and melts in your mouth. - Lobster, although I typically love lobster, I wasn't too fond of it here. It was meaty, but I liked the other more than this one. - Salmon, my second favorite fish for sushi, and once again so fresh and gobbled this up within seconds. We also got other things off the menu which were the Salmon with Truffle Ponzu and I absolutely loved this! We also ordered a couple of the Spicy Tuna Hand Rolls and my husband loved these, while I usually am not fond of the spicy tuna mainly because it's usually chopped up really fine and it's just a texture thing that I can't get past, this will be the ONLY spicy tuna I will ever eat! It's cubed up and quite delicious! We added the Toro Hand Roll as well, which I wasn't too fond of because it was chopped up... but the fish itself was good. This was quite a treat for us since we can't get this anywhere in Corpus Christi, but well worth every penny we spent! The service was great and we were well taken care of! I can't wait to come back next time we're back in town!

This was the best sushi I've had in my entire life. The stand outs for me were the o-toro nigiri, which literally melted in my mouth, the flavorful spicy tuna hand roll, and the unagi hand roll. Hatsuyuki is now a must-do each time I come to Fort Worth. Add it to your itinerary when you come out to Ft Worth. This is my 7th time coming to the restaurant and I live on the east coast! Phenomenal quality of fish - the restaurant alternates menu items based on available seasonal fish. You know it's fresh and tasty! You'll sit around a square sushi-bar style table. Sushi Chefs and staff listen to menu modifications. They also can explain what can be sushi vs sashimi. Goal for myself is that next time I'm at Hatsuyuki, I want to order more custom sashimi. There's usually a line 15 minutes prior to seating. Come early. There's is parking pay-to-park.

Fast service and the food is almost too good to eat! The oysters are the best I've ever had. They were out of red crab when I was there so just know their selection may be a little limited but it's still great. They also validate parking which is wonderful.

The right amount sushi rice and fish, with reasonable price. Combo deal saves you a little. Their daily hand roll on the menu is very limited. Smart business concept. Service was fast. They have enough sushi chef and only few basic fish in the hand roll menu. All main hand roll fish already prepped and ready. The today special menu on the board basically the typical sushi menu in japanese restaurant. The list depends on the fresh fish they got that day. I came late at night. No more lobster and toro. You could tell they only have limited qty daily, fresh. The place is medium size. One store size with wood Sushi bar type surrounding sushi chef in the middle. Modern ambiance. Mostly hispanic chef. Street parking in front. Validated with the restaurant rows, somebody mentioned 12-4pm. Make sure read the instructions at the restaurant, scan the QR code inside restaurant to validate. No enforcement at night. Not bad at all.

My husband and I went for lunch on a Tuesday right when they opened and didn't have a wait. The restaurant filled up quick after about an hour or so but diners came and went and there wasn't a wait when we left. The restaurant is small and everything is made right in front of you. They have their daily specials on a chalkboard to the left of the restaurant and it is also posted to their facebook & instagram stories (I like to take a screenshot of it!). Sushi chefs are attentive to you as well as their servers. Each of our selections were made meticulously and came one after another perfectly timed. Everything we got was amazing as always. One of our favorite places to dine!

Came here at 12pm (opening) on Sunday and it was already a 45 min wait for a party of 5. Parking is validated from 12-4pm in the plaza. Just scan the QR code inside restaurant to validate. The eel roll is delicious. The salmon roll and spicy salmon roll tasted the same and both bland. Absolutely no seasoning. Got the yellowtail roll and found it okay. The salmon belly is good and chutoro is amazing Service is good. Friendly staff. Very clean. Though this place is underwhelming in comparison to other hand roll places I've been to.

Hatsuyuki is simply the best sushi in Fort Worth. I go there often. You need to get there early to get a seat. It opens for lunch at 11:00 am. It is a place for sushi/sashimi lovers only. I especially love the salmon with truffle oil, the hammachili, among others.

One of the rare restaurants that absolutely 100% lives up to the hype. We got there 20 minutes before opening and there was already a line. Doors opened on time and we were seated quickly. Service was great, the waitress even offered to take a photo of their specials menu on my phone for me to make it easier to ready. They have 3 combos to choose from and a huge list of specials to choose from which you can get as sushi or sashimi. The Uni Premium, Yuzu Salmon, Scallop, and Wagyu Uni were my absolute favorite. I would drive 50 minutes to Fort Worth every single week for these. Every hand roll was great, the nori was perfectly crisp and the rice is perfectly seasoned. You can't go wrong with any of the options. There's limited seating so get there before opening to get a spot! The wait is worth it.

Let me start off by saying don't complain about waiting because it's definitely a treat once you start to feast. The staff was very friendly and acknowledged us while we waited. We wanted to do a Omakase but the manager (maybe the owner) suggested we go off the specials menu and pick our own fish because he had a nice selection of exotic fish while we were there. I won't explain the rest so please enjoy the pictures and start salivating because this was by far one of the best sushi experiences we have had. The ambiance is a simple bar style seating but you get to enjoy watching the chefs in action.

So I saw a yelp article link about "Top 100 sushi" and had to check it out because sushi is my favorite. I was surprised that I had only been to one place on this list and it wasn't a great experience, so I knew something must be wrong with the list. However, I did spot Hatsuyuki on it, and the last time I as in Fort Worth, I said I would check it out. So the list really motivated me to check it out when I was in Fort Worth next. It's kind of conveniently located in the culture district, but the parking is weird. DON'T PAY FOR PARKING like we did..... we parked and paid using the QR code posted ever 2 feet in the parking lot and then when we got into the restaurant, the restaurant had a sign posted about free parking, but they don't reimburse you.....which is what I thought "validation" means..... UGH anyway, now we know. So the restaurant consists of one large sushi bar with the sushi chefs working inside in the center area and three counters kind of enclosing them in. I'd say there are about 18-20 seats. At 11:30 on a Friday there were about 5 seats open, so we didn't have to wait at all and by the time we left, most seats were open. I was nervous because I had read the reviews about there being long lines but maybe that is just for dinner or on the weekends. So they gave us water with cute little sliced lemon in it and asked it we wanted anything else to drink. I saw another customer with iced matcha green tea and I opted for one of those. I saw this customer get free refills, but our waiter didn't ask if I wanted refills, so I'm not sure exactly what the refill policy is. They handed us a sheet with some handroll options and then pointed to a chalkboard menu behind the sushi chefs. The chalk board was really hard to read, even with the zoom, I couldn't make out any of the prices. Unfortunate, because I think I would have ordered more if I could actually read the menu. I ended up choosing the 4 handroll option which came with salmon, crab, scallop and hamachi handrolls for $17.50. It's not a bad price for 4 handrolls, but it's not exceptional either. I think of the 4, I liked the hamachi (which was really the mashed technique of cutting the fish with green onion--negi hamachi?) and crab the best. The scallop was also good, but for some reason, I thought it would be the big scallops and not bay scallops in mayo sauce. The Salmon was my least favorite because it was actually salmon and ahi... I like my salmon and ahi separate. I also ordered an ama ebi with uni (1 piece for $12) and a fried yamaimo, which really should have been explained better I think. The ama ebi had the head and tail already cut off and the uni was perfect. I could eat just this and die happy, but for $12 a piece I might have to make more money first. The fried yamaimo was a hand roll.... It was two pieces of fried mountain yam in a handroll with shiso leaf. I love shiso leaf, and I love mountain yam so this was great, I just think I would have ordered another one and would have been more excited about it if it was better explained on the menu. I had a salmon belly nigiri as well.... we ordered it not because we could find it on the menu, but because a lot of other people were ordering it. I will say that I really appreciate the effort that is put in to torch the fish and add all the toppings, but it was seared salmon belly and you can get this at most sushi places. Overall, it was a good lunch. $35 per person and the quality of fish and the execution is good. Is it top 100 in the nation though? Mmmmm... I've definitely had better. Still worth checking out though if you're in fort worth and enjoy sushi! Btw, I saw two guys come in, they sat down and then ended up leaving. not sure why....maybe they couldn't see the menu either.

I've been here more than a handful of times, so this review is long overdue. We always come right before opening time because it does get busy quickly. They do not take reservations, so it's first come first serve. There is no tables, everyone is seated at the bar. Enjoy watching the chef make your order right in front of you. Service here is always fantastic. I have not once had a bad experience here. We always gravitate towards the special menu. And let me tell you, the fish is so fresh! The ingredients for each piece is perfectly balanced. I promise you it will make your taste buds happy. Fresh wasabi all the way! Hatsuyuki is my top choice for sushi in Fort Worth. So if you haven't, you must! This is a command!!! Go now! Food: 5/5 Service: 5/5 Ambiance: 4/5

Hatsuyuki is one of my favorite handroll bars, and it can be yours too if you have patience. Like most handroll bars, Hatsuyuki doesn't take reservations for dinner. If you're going on Friday or Saturday night, be prepared to wait for at least an hour. There's not a lot of room to wait inside so you may be outside waiting for your spot. Once you do get seated you're able to order immediately and the food takes no time at all. The menu is made to order right in front of you and everything is fresh! A lot of places can prepare fish and seafood well. A lot of places can create good sauces and dressing. Hatsuyuki is exceptional at these aspects, but what separates them is the rice. You can tell the time and details they take into the rice. Will have to come back to try the Black Cod.
