It’s hot in Texas and eating outdoors isn’t super comfortable, but the food was amazing. I’ve never given 5 stars for BBQ before and I’ll tell you that the sausages were both excellent and perfectly smoked the beans were heavenly with brisket in them. Fabric and lucky stop for me today!

We stopped by for some BBQ on our way back to Austin after a day of floating the comal and were pretty worn out and expecting to relax in the AC so it was a bit of a surprise to find out it was an outdoor food truck. I guess the photos on google/yelp showing an indoor location are from their previous spot, though they did say they will be going back to brick and mortar spot at some point. Happily it wasn’t too steamy outside so we decided to stay though the fact that there are no bathrooms at all was a definite negative (two of our party had to go to the pizza place next door and buy something to use their restrooms!). That being said the staff was very friendly and even offered us a free sample of the turkey while we were deciding which honestly is what convinced us to stay! It was super moist and flavorful. I ordered a half pound of pork ribs, ended up with .6lb which was only two ribs- but they were big and ended up being a surprising amount of meat. Ribs were tender but not falling off the bone, no complaint there I don’t want the meat to be mushy; flavor was good and sauce was decent though nothing special. The green chili Mac was pretty tasty though extremely creamy, I’m not exactly complaining lol but I like more cheese heavy. The potato salad was solid and they gave us plenty of onions and pickles. Other members of our party approved of the chicken, brisket, and jalapeño cheese sausage. I didn’t hear anyone say it was the best bbq they’d ever tasted but it was solid, flavorful, and satisfying fare. I would return especially to a brick and mortar- Texas summers are just too hot to eat heavy food outside! Parking seemed limited but we went at 3pm on a Wednesday so it wasn’t an issue.

Hays Co Bbq is amazing! From the brisket to the turkey! And even their banana pudding!! Not only I, but also my boys and husband loved it! Go check them out, you won’t regret it!

Clunky and slow service line, it was lunchtime. Ordered the pulled pork sandwich, pinto beans, and drink after a long wait in the cafeteria style line. The pulled pork was overdone, dry, with hard bits of meat, and not very flavorful. The only thing that saved it was the sauce. They have two kinds on the table and they were not labeled. I asked a customer about them. I was told one was Buffalo sauce and the other regular BBQ sauce, which is what I used to save the sandwich. Even with jalapeno and onion on it the sandwich was barely edible to me. The bun seemed as though it was in a warming drawer for too long. It was crumbly and fell apart. I also had their pinto beans. Now they were great! Perfectly cooked and seasoned, nice clear broth, and it had pieces of brisket in it. Plus sweet tea. Maybe the brisket is better. But based on my trip I don't think I'll be returning.

Definitely recommend!! Stumbled upon this place and WOW! The food is amazing! Husband got the brisket sandwich and hatched Mac n cheese, I got 1/2 lb brisket and potato salad. All of it was amazing! Brisket is so moist and tender, staff was super nice!

We stopped in to get BBQ here on our way through town on a family trip. We got brisket, sausage, mac & cheese, & beans. Absolutely everything was amazing!! Best brisket I’ve ever had, SO juicy and flavorful. My husband usually is all about the BBQ sauce but he said this brisket doesn’t even need it. The little fenced in outdoor seating area gave our toddler the chance to run around & burn off some energy after time in the car, so thumbs up for a family friendly environment, too! We will definitely be back when we’re in the area!

Great food!! We ordered our food to go at the main register. Where we were able to watch our food get sliced and weighed. The service was great. They had a super friendly staff. The brisket was tender and well smoked, turkey was moist, chicken was falling off the bone, sausage links were a good size, and the pork ribs were tender. Everything we ordered had a nice amount of smoke along with good taste and texture. The Mac & Cheese was super tasty, and so was the strawberry short cake and chocolate pudding. My only drawback was with the chicken. Even though it was falling off the bone and tender, I felt it lacked a little flavor and had too much cracked pepper. Otherwise, the chicken, along with all the other food, was delicious. If you're ever in Kyle, I recommend Hays County BBQ.

My experience with Hay’s County BBQ has never let me down. Even with the New move to the food truck, there quality service care and quality of food has remained immaculate.
