- That first evening for my friends in Saigon felt like it had been waiting for us. I took them fresh off the plane, we raced to their hotel only to freshen up and go straight back out, because I knew Heart of Darkness Craft Brewery would be the kind of place to shake off jet-lag, reconnect, and ease into the trip. We hadn’t seen each other in nearly two years, and with a rough itinerary looming, we needed somewhere that felt relaxed yet special.
The brewery itself is a feast for the senses. A robust taproom, moody lighting, industrial-chic design, plus indoor and outdoor seating that balances intimacy with energy. The beer list is wild. Dozens of core and rotating brews that push flavour, aroma hops, experimental styles, seasonal sours and surprisingly delicate pales. It’s no surprise they’ve picked up awards regionally and internationally.
Food here doesn’t trail behind. On our table were burgers, salads, wings, oysters and everything was cooked perfectly. The food is infused with enough creativity to avoid feeling generic. People always ask me "but why not Vietnamese food". Vietnam, specifically Saigon has an amazing international and fusion scene that shouldn't be missed out on. Don't limit yourself to local food when travelling, That's the hill I'm willing to die on.
