Wow! Taste explosion is the first thing which entered my mind as I bit into the first snack on the 9 course tasting menu with paired wine (the other dinner option was 7 courses, there is no a la carte for dinner).
Hebbo is a hidden wonder, the food is world class, and I think significantly more innovative than what I've had at other fine dining places including ones with Michelin stars (this one is totally deserving) while comfortably meeting that top tier level of what I think of as food engineering and artistry.
The execution is also perfect, all dishes being varied in taste, composition, style, etc, while all having that excellent combo of something crispy and something soft and a combination of clean and bold flavours in each dish. The ingredients are all sourced regionally (within 200km), and they tasted sublime as well as healthy. Totally unexpectedly, we left super full, the sizes were not miserly like some Michelin acclaimed places, but instead we're enough without being too much, until dessert when there was more than enough to guarantee if you leave hungry it's your personal choice.
Some food notes: Superb sourdough, product of trial and error has reached perfection.
The ambiance is simply unbeatable in the middle of Toblach lake nature reserve, and last but not least the service was perfect for us, Christoph provided our main service and time flew by with his fun personality, jokes, and clear explanations of the dishes, and at the start we were asked about allergens/dislikes and they removed goats cheese for me, no drama.
This truly is an exceptional restaurant, and worth travelling to to experience. You can even stay the night at the local campsite, or the local skyview chalets if it's too far to travel home or you went with the wine pairing (which was also delicious!)
