The 38 Essential Madrid Restaurants

"Madrid is well known for aperitivo hour, the moment in the afternoon when friends and family gather at a bar to enjoy vermouth and bites of pickled snacks. Hermanos Vinagre gives the tradition a charming update starting with the bar itself, replacing the usual, old-school decor with exquisite design from Cristina Carullo. Cañas and vermouths hit the steel bar alongside gildas, cockles with chile sauce, escabeche ahumado (mussels with smoked brine), or ox chorizo. The modern take has proven successful with locals; the owners opened a second location in the Chueca neighborhood and a third location in the Chamberí neighborhood." - Paula Móvil

We stopped for a light lunch on a sunny winter day. The terrace was a nice spot full of people. Food was ok but from our personal point of view it’s not for everyone. It focuses on cold, fishy stuff and vinegar has a sharp taste. The Russian salad was excellent, the meatballs not so much (they were lukewarm a slightly raw in the centre). The waiter outside was super efficient and considering he was by himself, he looked after us quite well.

Went to have an aperitivo with a friend and we left content with the experience. We tried the muscles in escabeche, the manchego cheese (one in escabeche/other normal), and a cured meat called sobrasada. Everything was nice. A bit pricey as we ended up paying 40€ for those 3 things and two coca colas each.

Small place with a terrace that’s very nice. There are not a lot of food options and when we arrived there were out of many. The food that we ordered was good.

Hermanos Vinagre on Narváez is a fantastic spot for flavorful bites. The tartar de picanha maturada was truly outstanding, and the ensaladilla rusa was excellent. The berberechos not only tasted great but also stood out with their original presentation. The atún fresco con almendras was also very good, rounding out a well-executed meal. A great choice for quality and creativity!

Came here for a beer and a snack - really enjoyed it. It’s just so you may have to wait on the steer for a table.

Vermuteria with wide selection of drinks and vermuts. The anchovies with butter toast were delicious. Great personal service in a beautiful space. Terrace and outdoor seating available.

The service is excellent and rapid. Food is affordable and if you happen to encounter one of the ever attending waiters such as Borja l, Sandra or Giovanni, you're in for a good service.
