Herve Pronzato is the French-born executive chef who has lent his name to the business, ably assisted by Grigoris Kikis (a young Greek chef who is constantly seeking excellence in his cooking) and George Efthimopoulos (an expert in hospitality and the restaurant’s general manager). One of the special features of this young, informal eatery is the elegant French-style yet Japanese-inspired counter where guests can watch the chefs at work (the latter serve dishes personally and are happy to explain their preparation in detail).
