Must-Try Dishes in Tokyo, According to MICHELIN Guide Inspectors

"Young gizzard shad is a summer delight for sushi lovers. Each nigiri piece is crafted of three layers of young gizzard shad, pickled in vinegar to brace the delicate flesh. Shiitake mushroom nigiri was inspired by the astounding flavour of Yairo shiitake from Minamiuonuma. The refreshing tang of citrus is a natural companion for the sultry aroma of baked shiitake." - The MICHELIN Guide

"The omakase set menu provides an impressive variety, beginning with side dishes. After sashimi and bar snacks, vegetarian fare follows to change the pace and to signal the transition from snacks to nigiri. Sushi toppings showcase the chef’s craftsmanship, honed over many years, as well as a few of his novel touches. The first piece is tuna, the measure by which a sushi shop is judged. Unique choices include botan shrimp and shiitake mushrooms from Minamiuonuma. Eggs are rolled into Japanese-style omelettes, light and gentle in flavour." - Michelin Inspector

Stellar experience overall, but taking off a star because the seasoning on each piece was very inconsistent. Came in Oct 2025 and the menu included 22 courses total. You can see Chef Ishizaka's mastery in every piece he makes, however the seasoning varied too much and some pieces were overly salty, several others had so much wasabi that my eyes watered, others were perfectly fine. It even varied between me and my husband on the same course (i.e. my sawara had entirely too much wasabi whereas my husband barely tasted it in his). The service couldn't have been better - it's just a husband and wife team, and both of them are unfailingly kind and welcoming. They also recommended a few sakes that went very well with the sushi.

I've been to many Edo Sushi restaurants in Tokyo and throughout Japan and this is one of, if not the best that I've been to. Chef Ishizaka is masterful in his preparation and presentation of each dish/piece. It is a long meal, but every step of the way is like watching the chef make a piece of art.

This place is super underrated locally, but really popular among the Reddit community. As a rating of 3.27 on Tabelog, I was a bit hesitant but after reading great reviews, I knew I made the right choice coming here. The place is small, with 8 seats and the seating was all foreigners who spoke English. The owners were the chef and his wife? and they provided the upmost quality service. They were super friendly answering any questions. It does get a bit quiet sometimes when the chef is working his magic. Every piece of nigiri was cut thickly and melted in my mouth. There was quite some variety as well. The price is great for such great quality fish. I did book this on Tableall which does include the 8,000 yen fee which did increase the price by a bit. It was so worth it

Had a private dining experience here for my birthday. Food was really good and so was the sake. You can get the chef to recommend the sake based on the menu of the day. The chef also shared some information on the food you're eating which is pretty interesting. Reservations via SMS, will be back the next time I'm back in Tokyo.

If you have googled this place, chances are you have stumbled upon great reddit reviews. They are not wrong. To wholeheartedly endorse a sushi-ya does not come easy. Especially when each meal runs into the hundreds. This wonderful abode served one of the most unforgettable omakase for me. Nearly every single piece was exceptional, served in a way that was a notch above anywhere else. His otsumami which included the rich paring of liver, negi, ponzu soy sauce & sashimi was just divine. The master was kind & friendly, I was the only foreigner there but he took great care of me. Explaining every dish & the method to eat them. The 2 hours literally flew by so quickly and I didnt want to leave. I wanted to just sit by him, to experience his food & his hospitality. I found myself slowing my eating speed just wanting to savor and prolong each experience. This was the only place whereby I found a new level of sushi, a new realm of how delicious sushi could actually be. Absolutely incredible, his tabelog ratings are NOT an indicator of how good this place is. FYI ive tried Tomidokoro (4.0 on tabelog) and it dosent hold a candle to this place.

My love of sushi began when I was 13 years old and culminated here 20 years later. The taste and reverence for the art of sushi were unlike anything I’ve ever experienced. For a brief moment it felt like nothing existed outside of the small izakaya with us, the master and his wife. What made it even more incredible was his immense hospitality to us as foreigners. I’m sure I will make many more visits to Japan and to many different sushi restaurants, but I will always make it a point to return here. I don’t remember how much I paid, I just know it wasn’t enough Thank you so much

We had a reservation. Go to the back set of stairs and take it up. The omakase course is INCREDIBLE. Every single thing is incredible. Can’t recommend enough.

My experience at Hirō Ishizaka was nothing short of exceptional. Ishizaka-san and his wife were warm, kind, and accommodating. He would discuss each dish in English, and at one point opened up a book to show us pictures of the fish he had just served us. The quality and variety of appetiser and nigiri/sashimi served was absolutely phenomenal - the best we have had. I wholeheartedly agree with the other exemplary reviews of Hirō Ishizaka. The two hours felt like a gastronomical dream which I didn’t want to end. I can’t wait to return the next time I am in Tokyo.
