As a displaced Texan, I long ago accepted that I would not have real BBQ in my life. What Californians call BBQ was no substitution, but rather, an entirely different cuisine. Good slow-smoked brisket, with all the fixins, just wasn’t available. But then came this place. They know exactly what they are doing. Their meat is smoked correctly and is as good as anything I have ever had in Texas, with the exception of Franklin’s. And the sides are also very good. And if it wasn’t authentic enough, they have Shiner Boch on tap! This food is worth whatever they want to charge. I commend the Holé Smokes team for giving us this wonderful new treasure.
