"I learned that Meta Asian Kitchen began as a pop-up run by Chef Kenneth Wan and his wife Doris around New Jersey and New York, and now channels Kenneth’s background—the son of Hong Kong immigrants who ran a Chinese takeout in Boston, a French Culinary Institute graduate, and a decade of experience in New York—into creative, modern takes on classic Asian street food. The counter will highlight dumplings and rice cakes, with the signature Mama Wan’s rice bowl topped with braised pork belly and pickled vegetables; the menu (all items $15 and under) also includes shareable bites like bao buns and homemade chicken dumplings, Hong Kong street cakes (sweet, crisp and eggy, similar to waffles), popcorn chicken for kids, and a weekend brunch noodle bowl. Meta will open at 11 a.m. daily and stay open until 9 p.m. Sunday–Wednesday and later on Thurs–Sat (exact closing times TBD), with a changing late-night weekend menu featuring items such as spicy edamame, scallion pancakes, and fried calamari, and Kenneth hopes to build a following at Avanti before expanding into brick-and-mortar locations." - Paul Albani-Burgio
