"Owner Tony Hook explains that the orange color of their cheese comes from annatto—a practice Wisconsin dairy farmers adopted over a century ago to distinguish their product from the white cheddars of New York as Wisconsin rose to dairy dominance. The operation still uses annatto to color its bestselling 5-year cheddar, made from pasteurized local milk from cows raised on southwestern Wisconsin’s limestone-rich soils; the milk is heated with starter culture and color, left to thicken as bacteria grow, and then curds form. It takes roughly 10 pounds of milk to produce one pound of cheese, with the leftover whey repurposed as fertilizer. While the aged cheddar remains popular with restaurants and home cooks, the maker is also experimenting with new products and enjoys seeing customers’ reactions at the farmers market—finding satisfaction in producing something people love." - Eater Video

This wonderful family owned creamery is not to miss if you are in the area. In fact, they are worth a trip if you are not in the area. This creamery and shop is nestled in a quaint and well kept downtown. You can find their cheeses in a cooler up front. And you can watch them make some cheese if you are early enough.
Don’t miss the 15 year cheddar and triple play (extra innings). Super special cheeses.

The coolest place to stop and see true Wisconsin cheese being made. The owner was very nice and told us all about what was going on. Learned more about cheese then I ever thought I would. And the cheese curds were fresh (still warm) and amazing!

I love Hook's cheese, and get mine at the Dane County Farmers' Market in season, and drive to the cheese factory in Mineral Point, Wisconsin when I want to go for a drive in the Driftless Area. Any cheese manufacturer with six varieties of blue cheese and some seriously-aged Cheddars will get my cash.

We were traveling cross county and wanted some local Wisconsin cheese. We are glad we stopped! Great selection of flavored cheeses. We chose cow, goat and sheep cheeses. The gentleman who helped us was knowledgeable and very kind. Seemed like a great family owned business!

Beautiful historic building amid an entire city of the past. Best blue cheese EVER! Creamy and sharp but delightful. Other cheeses mixed with herbs and garlic. Impossible to make a bad choice.
