Red Herring Brings Mediterranean Food and Fine Dining to Waco | Eater Dallas

"Converted from a shipping container by Lucky Find Hospitality, I see the Hotel Herringbone as the project that set the stage for Red Herring and a broader shift in Waco’s dining scene, using a container aesthetic as the foundation for a hotel that pairs thematic materials with upscale touches." - Courtney E. Smith

We had an incredible stay!!! Momma/daughter mini getaway and this hotel was Perfect all around!!! We never had to get in our car!!! The restaurant was top notch dining and roof top bar was a wonderful cozy spot at sunset with incredible service from top to bottom!! We walked to Silos to shop & dine. Easy walk/hike by the river & bridges. Our room was a super cool Vibey double queen cozy beds with complimentary snacks & drinks in our room!!! Thank you so much for a wonderful stay!! We will be back

The room is aesthetically pleasing, the bath tub was fun and the snacks were a great bonus. However, the front desk isn't open 24/7 so plan to check-in during business hours. The hotel is right next to the train tracks and the walls are thin enough that you feel like the train is running through your bedroom at night. The rainfall shower is not a hotel trend I appreciate and there isn't a bright enough light to do my makeup. I don't think I would book again, but the location is convenient.

The location is good for downtown and Baylor campus events. We were very pleased with the quality of the food and service at the main restaurant. The bed was comfortable but we were disappointed in the room because there were no chairs, no drawers to unpack our bags and the AC didn’t work correctly. The coffee pods were not replenished the second day and the breakfast bar was granola bars and cold cereal with NO COFFEE. The hallways and elevators were dirty. One phone call to the front desk went to an employee’s cell phone mailbox which was full. I won’t stay here again.

The Hotel Herringbone is a place worthing pulling off the highway and staying a night anytime you're driving through the great state of Texas. The room was very styles and extremely comfortable. The restaurant and the shops in the bottom of the hotel makes the night feel effortless.

They went above and beyond providing a little surprise for my birthday and the room was great! Only complaint that others have mentioned is the train noise…I only noticed it twice at night and was able to quickly fall back asleep so didn’t need the provided earplugs, but otherwise no issues! The setup is definitely weird for ordering food delivery the drivers weren’t sure where to go since it doesn’t really look like a hotel from outside. Love the proximity to the Dr Pepper museum which was why we were in town!

🔥 Maintenance told my daughter if she smelled smoke to leave the room🤨 The first night couldn't get a hold of anyone to let them know the light wouldn't turn off and I couldn't unplug it or pull out the bulb. Next day they covered it with a trash bag!? 🛗 elevator didn't work the first day and we were on the fourth floor so definitely got our workout in. Bathroom lights are too dim and make it hard to do your makeup.

We met our cousins for Thanksgiving and had the good fortune to stay at your lovely hotel! Jasmine did an excellent job of getting us settled in. The staff and accommodations were outstanding- we had a blast at the rooftop bar watch football and having $1 Jell-O shots when the train rolled through!

Hospitality is lacking - no warmth or basic information was given upon check- in. Receptionist is not in the right job - she failed to inform us of the breakfast room on the 3rd floor until we asked. Nor did she tell us there was free coffee at the songbird for guests. She was put out about the 2nd key request for our room. Upon checkout there was no one at the lobby desk and we left the keys with a maid. Overall Staffing seemed light. We had a great time at Lucky Bucks rooftop bar and had a special dinner at red Herring- excellent service at both of these spots. Also the light fixture controls are confusing and our side lights were not functioning on the vanity.

Yelp
Great spot near the Silos. We did not stay there but ate in the restaurant. Great food, service and ambiance.

Yelp
The hotel is beautifully decorated. That is truly my favorite thing about it. There were a few Mrs in the room, including the light switch for the lights in the main part of the room are by the door so that's pretty far away from the bed. There was only one outlet by both queen size beds. One for all the beds. The TV did not work. They advertise that you got a free complementary room service breakfast. The only thing complementary was the delivery. The breakfast was also wrong. They said it came with sausage, but it came with bacon. There was no coffee either. The reason we booked for Friday night was so that we could enjoy the music at the Songbird. There was no music this Friday night. It was a lot of money for this day and I don't believe it was worth it..

Yelp
This was the absolute worst hotel experience I've ever had. We came here on our wedding night and greatly regret booking hotel herringbone. The hostess at the front desk was extremely unprofessional and rude. Upon checking in, we were ignored for several minutes by the hostess on her cellphone, then told they did not have a room available for us even though we had our confirmed booking details. We had to wait an hour for a room to be prepared, and it was not the room we originally booked. We ended up in a room so small that we could barely even walk around. We were also promised champagne & strawberries and an upgraded suite when we booked since it was our wedding night, but we received nothing. We are very disappointed in our overall stay, but mostly with the poor organizational structure of the facility and its staff.

Yelp
This is truly on my hit list. The next time I'm in Waco... This hotel has like everything, from shops, ballroom, etc. We visited the bar area at the very top and it was super aesthetic!!!

Yelp
Concept on paper is interesting and unique but there is a lot of room for improvement....mainly there is a DJ that plays on top of your room until at least 11 pm at night, (seems like they should feel you this before check in) the night we stayed there, they didn't stop until 11:25, and then they re arrange all the furniture on the rooftop bar until about 12:30, and then the train rolls through with an extra long horn at 1:30 am, so.....if you are planning on relaxing in your room or sleeping, you will not. I don't imagine that many people paying upwards of $300 a night not on a game weekend will be game for this experience, in addition....there is very limited parking, only about 10 spots, otherwise you are searching for street parking and they expect you to return your keys and if you don't, they charge you $5, place isn't for us, we won't be back.

Yelp
My parents stayed here for their 60th wedding anniversary. I did a lot of pre planning and Carrie was fabulous! She made sure they took care of all of my requests. My parents had the best time. They said they were treated like royalty! The staff was amazing. Everyone was very friendly and helpful. The LOVED their dinner at The Red Herring where they enjoyed a seven course meal at the Chef's Table. I would highly recommend staying here!

Yelp
This place is amazing!!! It has everything one would need for a get away. Beautiful rooms, shops and entertainment. The rooftop bar Lucky Bucks is fun with great cocktails and a beautiful view! I can't say enough about the Red Herring~Superb service, the cocktails were perfection. I love the ambiance, and the shared concept. The food was amazing!!! I will definitely be coming back!!!!
