Chilo is a very simple, old guest house/hotel set in a quaint small village. The hotel backs up onto crop fields, pastures and a mountain range. The building is charming on the outside but old and the rooms are very basic. The upper floor rooms get hot even in September, and will be stifling if you don't leave the windows fully open throughout your stay. The hallways are a bit dark but the dining room, bar, sitting areas and terrace are spacious, bright and comfortable. On balance the facility itself would be 2 or at most 3 'stars'. What makes the experience unexpectedly positive and worthy of 4 stars is the warmth of the service, and exceptional quality of the home cooking. Everyone in our large group routinely dines at "block letter" internationally recognizable restaurants and we all agreed that the fresh tomato and pepper salad was among the best salads we had ever eaten (maybe the best). Similarly, the cheeses, pates, pastas, eggs, fish and various small plates were each simple, unusually delicious and made of notably high quality ingredients. Moreover, the service was very friendly and accommodating. For instance, the hostess went out shopping in the village twice for additional ingredients and prepared supplemental servings for us as a special accommodation. Late arrival and early departure, extra soap and towels and other such accommodations were no problem. I wish every simple rural inn along our trans pyrenees bike route had been as friendly, and their cooks as talented.
