Hou typically holds court in the tiny open kitchen of this sit-down spot, cheerfully carrying on a conversation with regulars while whipping up an impressive range of dishes spanning Japan to Vietnam, like chewy udon, wonton soup, and bò bún that deliver on texture with its crispy spring rolls, smooth rice noodles, and crunchy carrots and bean sprouts.
