Coppa lacks depth,
wagyu bresaola is good as ever, and
Smoked beef tongue was excellent, with a nice bouncy texture. Think beef tongue gribiche sandwich from le bon funk, but way more attractively priced. This huge portion of 100g beef tongue is only 8sgd, I suspect le bon funk's 26$ sandwich only has about 50g of this
Second visit:
Lomo iberico has good flavour.
Many of their other cured meats are rather flat, and quite salty, like the culatello
The cooked beef tongue is still quite decent, there's some umami, but both the texture and flavour doesn't compare to the smoked one
Klosterkaese is quite expensive. Really soft texture, is a gentle cheese, unique flavour, but I won't say it's anything fruity unlike what they describe.
