The 33 Best Restaurants in Bogotá, Colombia | Eater

"After working in Europe and as sous chef at El Chato in Bogotá, chef Jaime Torregrosa flies solo at Humo Negro. At his moodily designed restaurant (as the name suggests), Torregrosa combines endemic Colombian ingredients with techniques learned while traveling, especially to Japan. Dishes are designed for sharing, such as the mini taiyaki — potato croquettes with seaweed, mambe (toasted coca leaves) buttermilk, and Amazonian chile. Or try the grilled leeks with chontaduro (peach palm), amaranth, and cashew, and pirarucu belly filet with camu camu and tucupi. Don’t leave without ordering one of the cleverly crafted savory cocktails." - Liliana López Sorzano

On the World’s 60 list for a reason. A small vibey restaurant tucked into a very happy neighborhood, we felt very cool and very welcomed as soon as we walked in the door. The food and cocktail menu noodles are both grounded is local Colombian ingredients. Everything was super delicious, but for the food, the standouts were the crabs ceviche and the seafood rice. I loved the cyborg and White Rabbit cocktails. This is the spot. I will definitely be returning to next time. I’m in Bogota.

My friends and I had dinner there recently. Two of us got the Omakase, which was a nice mix of Asian inspired dishes with Colombian twists. I personally really liked the Vice based cocktail and had two. The other two of us ordered à la cart. Lots of interesting flavors. The one knock on this place is that it allows dogs, and the night that we went there were at least three dogs there that were constantly barking. Every time someone would walk by the front entrance the fluffy white dog on the porch would bark and the other two dogs would bark in unison and it was quite obnoxious over the course of a 2 1/2 hour meal. I personally feel that the staff should do something and encourage the dog owners to control their companions because I don’t think we’ll ever go back again due to that fact.

Humo Negro in Bogotá is a true culinary gem. The concept is brilliant, dishes inspired by different regions of Colombia, each elevated with their own creative twist that leans toward a fusion fine art cuisine. The flavors are outstanding, but what truly sets this place apart is the service. I don’t think we’ve ever experienced such attentive, genuinely warm hospitality in a restaurant. The waitstaff are not only incredibly polite and friendly, but you can see they take immense pride in what they do. Our only regret was not choosing their tasting menu, which guides you through perfectly paired dishes and wines from various Colombian regions. We ordered à la carte, which was still delicious, but watching other tables enjoy the tasting menu made us wish we had taken that journey. The atmosphere is equally memorable, intriguing black decor, well chosen music, and a vibe that feels modern and a bit avantgarde. If you’re in Bogotá, we highly recommend Humo Negro. It’s an experience you won’t regret!

One of the best meals I've had. I very much enjoyed the creative and flavorful dishes with recognizable ingredients for the most part (not easy to achieve, while still being innovative and worthy of the 50 best in the world). I hope to return soon to try the rest of the dishes.

The best meal I had in Colombia! Excellent food, with some really incredible dishes! Nice wine and cocktail pairings and also a really good non-alcoholic pairing menu. Some of the non-alcoholic drinks were even better than their alchol counterparts. Would definitely recommend!

Went for our second visit, ordered from the menu instead of the tasting menu, and it was just as good. A really amazing food experience up there with any in Bogota and really pretty much anywhere. Fish dishes great, the signature oyster dish is famous for a reason... Should be in the running for best in Bogota.

Wow wow wow. I knew I was going to get a great meal, I mean it is one of the best restaurants in the world after all. But they exceeded all my expectations! I had some dietary restrictions that made me apprehensive of the tasting menu but the staff accommodated my restrictions by offering me some very unique substitutions! Daniel and Isabella were awesome in explaining each dish. All of the dishes in the tasting menu/omakase were excellent and the presentation was so beautiful! My favorite was the blue crab ceviche.

Amazing dinner at Humo Negro. We took the tasting menu which was a great way to get to sample a bit of everything. The staff was amazing explaining every course, the ingredients, and how to eat it. Drinks were great as well. The place is expensive but this is a culinary experience well worth the money. I will be back.
