"Previously active in the humanitarian sector, this chef found a new calling while being trained by mentors such as Cyril Lignac and Hélène Darroze. Remaining true to his ethos here in his vintage restaurant, he is mindful of the relationship between his cooking, nature and people, sourcing vegetables from the Hortillonnages (cultivated islets in Amiens), saltmarsh lamb from the Baie de Somme estuary, line-caught fish from the Côte d'Opale etc. Filet mignon pie, vegetable pickles or monkfish, tomato, aubergine and sea herbs: his – at times creative – dishes draw on various preparation techniques, good ingredients and flavours." - Michelin Inspector

Food was excellent m, lovely view. Very welcoming waiter. I then saw they got a bit overwhelmed for the next incoming customers but I would say even if the service might take a bit longer food and ambiance are worth it

The food was excellent, it was so different, creative and imaginative. The service was friendly and caring throughout the whole evening. We have been visiting France for more than 25 years and Amiens for more than 10 years, primarily because we adore the culture, way of life and especially the food. The meal we had at Hyacinthe was one of the best we have had in France and by far the best in Amiens. I only wish we were returning again soon to visit the restaurant again soon. A great place to dine and not to be missed.

If you are in Amiens and do not eat here you are insane. This is the future of French food. Classic technique and approach with a gorgeous kiss of the modern. As an example I had the ballotine of fowl with demiglace sauce. Good, of course. But the chef added baby brussel sprouts whose bitterness balance the umami The modern classic fois with eel was made brilliant with a beet root ketchup. 30 seats. 50 euros for 4 courses. I felt almost guilty paying so little. A genius. A future star. Bravo. Bravo!

We went to for a birthday dinner when visiting the city. The food was quite good, but the waiter forgot to bring the third wine pairing. When my partner brought it up as he paid the waiter just said “oh, yeah I forgot. Do you want a crémant now?” No. The entire point is to get wines that pair with the actual food, not a throw away glass after the service! He never apologized, tried to take an incorrect portion off the bill, and seemed generally annoyed that we pointed out he forgot! Had we known we wouldn’t actually receive pairings we would have just ordered a bottle. The entire thing just soured the experience and was a true pity for a birthday meal.

This tiny little restaurant is s treat of exquisitely prepared interesting food. I asked for a green salad as an entree, it was not on the menu however the chef created a magnificent salad japonaise as an alternative which was excellent. Full marks for going beyond the menu. Great chef

This place is worth travelling to enjoy. I would give six stars for the cheese plate alone. Original and engaging meal, reasonable price for quality cyisine.

Exquisite and surprising food, with innovative combinations - great flavours and textures. A real find . Lovely service, lovely people and well priced . The most interesting meal we’ve had all year and great to learn that it’s all organic and locally sourced. Thankyou for a really interesting feast.
