"Previously active in the humanitarian sector, this chef found a new calling while being trained by mentors such as Cyril Lignac and Hélène Darroze. Remaining true to his ethos here in his vintage restaurant, he is mindful of the relationship between his cooking, nature and people, sourcing vegetables from the Hortillonnages (cultivated islets in Amiens), saltmarsh lamb from the Baie de Somme estuary, line-caught fish from the Côte d'Opale etc. Filet mignon pie, vegetable pickles or monkfish, tomato, aubergine and sea herbs: his – at times creative – dishes draw on various preparation techniques, good ingredients and flavours." - Michelin Inspector

A wonderful lunch. The food was amazing as was the friendly and knowledgeable service. Very nice matching wines as well. All in all food and service of a very high standard. And very reasonably priced. Highly recommended.

Food was excellent m, lovely view. Very welcoming waiter. I then saw they got a bit overwhelmed for the next incoming customers but I would say even if the service might take a bit longer food and ambiance are worth it

It is a shame that we waited while standing and also sitting, however, even though waiter and waitress saw us, noone approached us. After sitting a while, we had to leave. It is quite disrespectful! Answer to the reply: There was one girl in front of the kitchen entrance and a waiter in front of a crowded table. We entered inside, waited in front of the door for a while and then sit outside (there were 3 black tables for 2 people each) for 15-20 minutes. And, we can read the name of the restaurant.. Instead of making unprofessional excuses, I strongly suggest to learn to apologize!

The food was excellent, it was so different, creative and imaginative. The service was friendly and caring throughout the whole evening. We have been visiting France for more than 25 years and Amiens for more than 10 years, primarily because we adore the culture, way of life and especially the food. The meal we had at Hyacinthe was one of the best we have had in France and by far the best in Amiens. I only wish we were returning again soon to visit the restaurant again soon. A great place to dine and not to be missed.

We went to for a birthday dinner when visiting the city. The food was quite good, but the waiter forgot to bring the third wine pairing. When my partner brought it up as he paid the waiter just said “oh, yeah I forgot. Do you want a crémant now?” No. The entire point is to get wines that pair with the actual food, not a throw away glass after the service! He never apologized, tried to take an incorrect portion off the bill, and seemed generally annoyed that we pointed out he forgot! Had we known we wouldn’t actually receive pairings we would have just ordered a bottle. The entire thing just soured the experience and was a true pity for a birthday meal.

Amazing find. Just off the main square from the cathedral with fantastic views. The food was incredible. One chef and waitress who make a fabulous team. Service is perfect-not rushed. Allowing you to enjoy your food and the evening. A leisurely evening with superb food, beautiful and original flavours-a treat for sure! Highly recommend
