FEE / SURCHARGE WARNING!
True ... in NYS it is not legal for servers to technically share their tip. There are other legal options. True ... other establishments charge fees, BUT, it is because they have problems getting labor and don't want to raise prices. REALITY is adding fees is presumptuous and an entitlement. The back of house staff should appreciate they even have customers. They think by telling you ahead of time on the menu and website they have justified their actions. I don't know about you, but, I go out to dinner to relax and not have to read the fine print. Customers don't like to ask (confront) to have these fees removed. How would you like it if at a grocery store checkout, they pre-add a charitable donation and you have to ask them to remove it? Why not kindly present the customer a note card when the bill comes at the end of the meal so they know they received what they expected (proper portions, clean dishes, no-one spit in their food, etc.)? By the way, my meal was a little over done. Customer have a choice. Customers voice their choice voting with their money. Say NO to having your voice taken. Say what you want, think what you want, but, don't let someone to take your money and have you ask to get it back. Oldest trick in the book. STOP THE MADNESS!
