When searching for the local food of St Louis, it's hard to miss the local variation of pizza, specifically at one of the many Imo's locations.
We ordered ahead for 2 pies and got there right around the lunch rush. I went up to the counter and requested to add some toasted ravioli. While the lady at the counter was super friendly, it took way longer than I would have liked to actually get my food. I did see that they kept all my food in a heater, and I did see them put the ravioli in as I was waiting. But because of the rush, I had to wait an extended time after that to actually get my food, and while I completely understand that it was busy, it would have been nice for someone to take a quick pause to just pass me my food as I had already paid.
Now on to the food itself. If you've never had St Louis style, it's definitely unique. The use of Provel cheese, which I've learned is a processed mix of cheddar, Swiss and provolone, has a slight tangy flavor to it. On top of the crust being pretty much a glorified cracker, it felt like every bite I took was a cracker with cheese spread not too dissimilar to the cracker and yellow cheese spread you got in your lunch box as a kid. While it's not totally a bad thing, and while I fully understood this experience was going to be different, if I didn't do any research, was in town to visit and wanted some good pizza and got Imo's, I think I would have been put off immediately. The Deluxe was slightly better because the addition of traditional pizza toppings, but it just didn't vibe with me as a whole. With that said, I can see why it's popular with the locals. It's something that's uniquely their's and that's a good thing I think.
