We are passionate about traveling and have experienced many Michelin-starred restaurants in many countries,and this fine dining spot in Santiago truly impressed us! The owner was incredibly warm and welcoming, patiently walking us through the menu and even taking special care of our kids, which we really appreciated. The dishes were creative, beautifully plated, and absolutely delicious. Overall, the experience fully lived up to Michelin standards — we truly hope they receive a star soon! ⭐ Just a small suggestion: we had booked the last seating of the day (having driven in from another town), and while we arrived right on time, the dining experience felt a bit rushed. At one point, one of the dishes was cleared away while I was still finishing it 😅. We understand the staff may have been eager to wrap up for the night, but since this time slot is offered, it would be great to allow guests to savor the full experience without feeling hurried. Still, this was an outstanding meal and one of the best dining experiences we’ve had — we’d love to come back again! 🍴✨

Behind a deep glassdoor storefront lies Indomito: a sleek, minimalist, deeply fashionable food spot, unique and spectacular; its chairs, tables and the bar slotting perfectly into a snug space, in front of the cooking action. From this unassuming base, the chefs have launched a culinary journey that has conquered the surrounding neighbourhood in Santiago de Compostela. The affordable menu features only bombshell plates that combine disarming simplicity and watchmaker precision. A Jewel, only fresh ingredients from market, surprisingly good, just let the chef drive you through a sea of delicious plates. Loved the wine. Will be back in no time.

We had dinner at Indomito recently, and while the experience had its highlights, it left me somewhat underwhelmed overall. The restaurant has a "unique" concept where the chef decides your meal instead of ordering from a menu. While this can be exciting for some, I found it limiting and frustrating. It felt odd that there was a menu at all if we couldn't choose our dishes. The food itself was well-prepared with good quality ingredients, but it lacked that WOW factor or surprise element that I look forward to in fine dining. Considering the price point, I expected more in terms of innovation and memorable flavors. While everything was cooked perfectly, nothing stood out as exceptional or particularly memorable. Although the lighting in the restaurant was dim and there were few customers, the service was attentive and professional, contributing positively to the overall dining experience. In short, Indomito offers well-cooked food of good quality, but falls short of delivering a truly memorable dining experience, especially given the lack of choice despite a menu presence. For those who enjoy surprises in their dining adventures, this might be worth a try, but for me, it didn't quite hit the mark.

Celebrated our anniversary on 26 Sep with an amazing dinner spread with dishes recommended by chef Martin. It was also the day we arrived in Santiago after our Camino pilgrimage. Food was simply out of this world in terms of taste, creativity and presentation. Service by Manuel and the crew was impeccable. Would want to come back to try chef Martin's creations

We had a wonderful, unique meal. The attention to the diners was foremost, and we were visited by the chef as well as the staff. We loved the local fish dishes so elegantly prepared and the quail was special. We were not overwhelmed with the food and the wine was a perfect complement. A memorable experience.

As lovely as restaurant as I've ever visited. We're lying here in bed remembering each lovely course. I very much enjoy leaving all the choices to the host! Squid like I've never eaten. Loud popping of a crisp dumpling in a pan. Excellent wine! Thank you all very much!!

This was the very best for a very long time. And they know they are good. Very good. This was the end of our vacation. And what an end. We let the waiter and chef decide. What a treat. Need a special gourmet meal in a relaxed and friendly environment. Look no further. There are not enough stars for Indomito ❤️

‘Indomitable’ is the new and personal project of Martin, the former head chef and soul of Casa Marcelo, the well-known Michelin star in the old town. A cozy and elegant venue in the city center but out of the old town with a good service and tasty food based on good local product. Just open but no run-in period needed. All working smoothly even attending the 50 seats available when the restaurant is full.
