We had dinner at Indomito recently, and while the experience had its highlights, it left me somewhat underwhelmed overall. The restaurant has a "unique" concept where the chef decides your meal instead of ordering from a menu. While this can be exciting for some, I found it limiting and frustrating. It felt odd that there was a menu at all if we couldn't choose our dishes. The food itself was well-prepared with good quality ingredients, but it lacked that WOW factor or surprise element that I look forward to in fine dining. Considering the price point, I expected more in terms of innovation and memorable flavors. While everything was cooked perfectly, nothing stood out as exceptional or particularly memorable. Although the lighting in the restaurant was dim and there were few customers, the service was attentive and professional, contributing positively to the overall dining experience. In short, Indomito offers well-cooked food of good quality, but falls short of delivering a truly memorable dining experience, especially given the lack of choice despite a menu presence. For those who enjoy surprises in their dining adventures, this might be worth a try, but for me, it didn't quite hit the mark.

Had a great lunch experience here yesterday. The chef proposed to serve us his 6 choices and we went for it. Every dish was delightful and very tasty, as was the light red wine he suggested. I suppose you can also order a dishes la carte. The price for the food was about 60 Euros for each of us, so, quite reasonable for such great food. Service was also very attentive and super friendly.

Behind a deep glassdoor storefront lies Indomito: a sleek, minimalist, deeply fashionable food spot, unique and spectacular; its chairs, tables and the bar slotting perfectly into a snug space, in front of the cooking action. From this unassuming base, the chefs have launched a culinary journey that has conquered the surrounding neighbourhood in Santiago de Compostela. The affordable menu features only bombshell plates that combine disarming simplicity and watchmaker precision. A Jewel, only fresh ingredients from market, surprisingly good, just let the chef drive you through a sea of delicious plates. Loved the wine. Will be back in no time.

This was the very best for a very long time. And they know they are good. Very good. This was the end of our vacation. And what an end. We let the waiter and chef decide. What a treat. Need a special gourmet meal in a relaxed and friendly environment. Look no further. There are not enough stars for Indomito ❤️

‘Indomitable’ is the new and personal project of Martin, the former head chef and soul of Casa Marcelo, the well-known Michelin star in the old town. A cozy and elegant venue in the city center but out of the old town with a good service and tasty food based on good local product. Just open but no run-in period needed. All working smoothly even attending the 50 seats available when the restaurant is full.

Martin and team were very inviting, attentive and playful. We took our time and enjoyed every bite. The plates were shared (which we loved), making the experience more exciting and conversation stimulating. The flavors were powerful and subtle all at once. We will be talking about this meal for years to come.
