Legitimately the best meal I've had in this city. Everything from the appetizers to the dessert was incredible. Our waitress did a great job explaining the menu and offering suggestions, as we werent familiar with a lot of the menu items. The meats were cooked to perfection, but what really blew me away was the amount of flavor that was packed into those sauces! I especially loved how chef Fernando came around to interact with the guests. All in all a really great experience, we will be back!

Such a great night at INEFABLECoS last night. The cocktails, pork belly, and desserts were the standouts, but the mains were great as well. Lamb and steak were cooked to perfection. Our waiter and the owner are fabulous people and so clearly passionate about what they do. They were very quiet for a Sunday night, so please get out and support them! Really nice atmosphere and super high quality food and drinks that were clearly made with love and worth every penny. (Plus, they gave me a to go container for my mole sauce…and then I forgot it, they obviously threw it away, and then they packed up more for me to take home! Who does that?!)

Awesome new place inside Avenue 19. A great place to take your significant other for a special occasion, entertain a prospective client or reward your team for their accomplishments. Food, service and ambiance are fantastic! Our group shared and ordered a little bit of everything but the shrimp appetizer and scallop gnocchi seemed to garner the most orders and praise from our group of 10. Already looking forward to next time!

What an incredible meal - from the smoky pear drink, to the ceviche and pork belly appetizers, we knew we were in for a treat. The entrees and desserts were also gorgeous and delicious, and service was impeccable! We will definitely be going back!

Everything was terrific here! The food and drinks were wonderful and the staff were all friendly and helpful. We really loved everything we tried. The ceviche and the huitlacoche tart appetizers were both delicious, as well as the gnocchi with scallops and the steak with chimichurri. This place does an excellent job of putting a sophisticated touch to many classic dishes. This new gem is located on the 2nd floor in the Avenue 19 food hall.

A bit hard to find the first time, but so worth it!! We had the ceviche, the scallops & gnocci, and the braised short rib with sweet potato “silk.” Everything was so good!! I had a pear martini and it was delicious. I tried a tequila drink with pineapple but it tasted a bit…swampy? Like a pond? Learned they use canned pineapple for that. I’m sure most people can’t taste the difference but I’m super sensitive 🥴 there were a few other gaffs that are to be expected with a new restaurant, but on the whole it was phenomenal!! (Apologies, forgot to take pictures until midway through the entrees)

What a gem! We were a group of 5 and we all left so happy! Every dish that we tried was great, ouf favorites being the ceviche, and the duck. The drinks were also great and they were very nice about creating a mocktail for one of us! Servicecand ambiance were on par with the food! We'll have to come back for a special occasion!

I AM IN LOVE. As a longtime Tucson resident (the first UNESCO city of gastronomy), I am rather particular about Mexican food, so I was excited to learn about Fernando and Inefable. Oh good lord... from the smoky platano cocktail (smoky banana! you must try it) to the tostada to the unbelievably tender steak with superbly-balanced chimi and my lamb with mole and sweet potato silk, Inefable knocked it out of the park. On a quiet Thursday night (early - before a show), we experienced impeccable friendly service from our waitstaff and the bartender, as well as Fernando himself. Our server noted that we had a show and needed to get moving, but we were never rushed and made it there on time. Did I mention Thursday night wine specials? Smooth Tempranillo to go with the steak... even the fries (steak and potatoes!) were exquisite - fresh, crispy without being too oily. Best meal I've had in 6 years in Colorado Springs! Thank you Fernando for an excellent experience - see you next time!

I have so many positive notes on this restaurant. My husband and I came in on 7/12 with a food/cocktail tour. We got to try a passion fruit margarita and the hamachi tostada. My goodness we're both so delicate, tasty and just a completely perfectly thought out bite and sip that we knew we had to come back. They were so amazing we actually skipped out on our plans that followed the tour and came back for a couple of cocktails and apps. We order the pork belly al pastor and the duck flautas. I ordered a strawberry margarita this time and my husband ordered a passion fruit margarita and asked if it could be made spicy. The bar tender said of course and when he tried it, I'm pretty sure his eyes rolled into the back of his head with delight lol! The owner was there on the tour and hearing his story and passion for the business was so lovely. Everyone we encountered actually was really really kind. Seriously I can't think of a negative word to say.

The service & the food were good. The ambiance was great too. We sat on the deck. It was super fancy foodie food though. If you're hoping for a nice basket of chips with Mexican food, this isn't that kind of place. It was really expensive also for the amount of food. But the relleno with quinoa was good.

Fantastic flavors, we enjoyed every minute of our meal. The kitchen was extremely flexible with my tree nut allergy. I never felt like I was missing out. The green mole is delicious, as was everything else. We will be back!

This place was indescribable. This the name we figured out. Spanish for indescribable. The chef and owner Fernando is one of the top chefs in the city! Makes amazing creations. This ain't your traditional mexican food!

Inefable by Chef Fernando Trancoso is such a delightful find for any foodies in CO Springs! We happened across this lovely little restaurant tucked away inconspicuously in a shared space off N. Tejon and are so glad we did. The cuisine seamlessly blends classic Mexican flavors with surprising other influences - from subtle nods to Japan fare in the sashimi appetizers to hints of Italian in the *delectable* scallops with pan-roasted gnocchi. We went with friends and there were no faults to be found with any of our meals. The excellent service - and very amiable Chef who is as kind as he is talented - only adds to an overall great experience. Highly recommend. Get the scallops. And yes - it's upstairs ;)

Great restaurant tucked on a mezzanine in Downtown Colorado Springs. Our party of 6 came for a nice foodie dinner out and INEFABLE was fantastic. Drinks were very good with the smoke cloche presentation adding to the experience. Every dish on the table was delicious from the Pork Belly appetizer to the Scallops Gnocchi entree to desserts. Flavors were well-balanced and many dishes were a playful fusion between Mexican cuisine and other styles. Highly recommend for a fun date night or friends' gathering. We will definitely be back.

Because I wanted to try as many things as possible on my first visit I ordered 3 apps and a glass of wine. The first app was the tostada de hamachi., raw hamachi on a hard tortilla with red onion and an avocado puree. It was delightful. Second were the duck flautas with tomatilla foam, cheese, and oaxacan cream. Also wonderful. The third was the fruit gazpacho with three seared scallops. This was also very good. The decor was nothing special as is common in Colorado Springs. But the food was excellent and I will return to try the mains. This is the type of restaurant I think COS needs more of and I hope the city supports it.

This is top notch upscale Mexican food in Colorado Springs. Run don't walk to Inefable. I saw it suggested in the recent NY Times "36 Hours in CO Springs" and hurried to book a table for our upcoming trip. We were very pleased with this choice. It's current, creative Mexican cuisine along the lines of Richard Sandoval and Rick Bayless. We had steak entomolada, lamb chops with chimichirri sauce, pork belly tacos - all excellent. Cocktails were excellent as well. Service was good and the chef came out to great our table. The restaurant was 3/4 empty on a Sat night. Given the excellent quality of the food and drink I have to think this is because of the location. It's pricey - but same price as The Rabbit Hole, where we had been the night before and it was packed. Inefable is downtown in the heart of things - just very hard to find given its second story location. You enter through the Avenue 19 Food hall door (we finally had to ask someone as there wasn't any street level signage). The atmosphere of the main restaurant is just ok. The deck is nothing special and the view is a parking lot. This is big-city quality top tier Mexican food - can an investor go in with this chef and get him a better location befitting his food and drink!?

This is the best date night dinner we have enjoyed in a long time! From arrival to dessert, Inefa ble provided a wonderful experience. The cocktails were imaginat8ve a delicious. The featured bottles of wine were interesting, superb, and a bargain. We shared a phenomenal pork belly pastor appetizer, with a nice, spicy but not overpowering kick. My wife had the duck confit and I had the scampi with pan fried gnocchi. Both were so good we couldn't decide who ordered better! Our grave meringue dessert was an explosion of flavor. Our server Ali, was knowledgeable, polite, friendly...just top notch. Chef Fernando stopped by the table several times, checking to see if everything was to our liking. He has created a restaurant that provides all you could ask for - a place we will return to again and again!
