Evanston’s Best Restaurants | Eater Chicago

"Chef and owner Kalpana Waikar runs a small shop in Evanston with a curated selection of sandwiches full of South Asian flavors. Take the Bombay Sandwich, served on sourdough panini bread with masala potatoes, pickled red onion, tomato, cucumber, green pepper, and roasted beets. This is augmented by a Kashmiri chili aioli and cilantro-mint chutney. The sandwiches are vegetarian, and there’s also an Indian-style omelette sando with chaat masala. These unique bites are unlike anything customers can find in Chicago." - Sam Nelson

A Creative Brunch Hit Expands to Chicago’s Near South Side and Six More Upcoming Restaurants | Eater Chicago

"I'm intrigued by Inspired Indian Co., aiming for a June debut at 914 Noyes Street in Evanston as a suburban restaurant specializing in meat‑free Indian sandwiches; the menu will include a signature Bombay Sandwich (steamed potatoes, beets, green pepper, pickled onion, tomato, Muenster) dusted with sandwich masala spices like cumin, star anise, and pomegranate powder, plus a retail section of spices, packaged snacks, and pantry items." - Naomi Waxman

After trying the paneer sandwich at the Umbrella Arts Festival (and loving it!), I knew I had to try the Railway Omelette. I was not disappointed! The flavors blend wonderfully, not spicy, just flavorful. I ate half and handed the other half to my husband as I was heading out the door. He called me halfway through the sandwich to tell me how much he loved it. I look forward to trying all the sandwiches at Inspired Indian!

I recently tried the Paneer Tikka from Inspired Indian Co., and it was absolutely delicious. The dish was bursting with flavor — rich, full, and beautifully spiced — without being overly hot, which I really appreciated. I’m usually sensitive to spicy food (I even get hiccups when it’s too hot!), but this was perfectly balanced. It had all the depth and aroma you’d want from Indian cuisine, just without the burn. A fantastic option for anyone who loves flavor but not fire! You could probably get fire, if you're really into that sort of thing. Definitely my kind of yummy!

The sandwiches are amazing! I have really enjoyed everything I have tried, and it is clear the sandwiches are crafted with care. I usually order in advance online for a later pickup time and the food is always ready when I get there. So excited to have Inspired Indian within walking distance from Northwestern's campus!

Omg guy's these sandwiches are delicious. You'll love them even if you're not vegan or vegetarian. My husband introduced me to this spot, and I'll be a forever customer.

Alright y'all, this is the new best sandwich in Evanston. Incredibly delicious and all made in house. You can order most things vegan, too!!

The Bombay sandwich took me back to my childhood trips to India and the chai sugar cookie was the right balance of flavor and sweetness. I look forward to going again!

Tried a sandwich for the first time today-delicious!! Food was ready right on time, it was perfectly warm, and filled me up perfectly.

Very cool food concept; Slaw was tablespoon sized and super bitter, almost plain cabbage; was hard to find Paneer Tikka flavor under all the salt; cheese was split like egg; little filling so the top and bottom sandwich bread touch all the way around; interior looks unfinished; sandwich took 20 minutes with no orders ahead of mine.
