Iowa Meat Farms is definitely one of San Diego's best kept secrets! Two of my favorite things to do in life is Travel and Eat. Because of this, I often find myself recreating dishes from my trips near and far. As anyone that loves to cook knows, the ingredients are sometimes much more difficult to obtain the the recipe itself. After my most recent trip to Italy, I wanted to make one of Tuscany's famous dishes: Pappardelle al Cinghiale. The challenge was that I needed to get Cinghiale (wild boar) and that is not easy to find here. That is when I discovered Iowa Meat Farms, which carries wild boar meats of various cuts, as well as many other hard to find meats - from alligator to rabbit to pheasant to elk.
Another time, I needed to get Guanciale, an Italian cured meat made from pork jowl/cheeks (similar to pancetta but different). This was an essential ingredient in making the infamous pasta dish: Bucatini all'Amatriciana. Thanks to Iowa Meat Farms, I was able to replicate my two favorite Italian pasta dishes, using the proper traditional ingredients for the perfect authentic taste of Italy.
Aside from the hard to find or exotic meats, there are many many wonderful cuts of beef, pork, lamb and chicken. I have not been to a butcher shop that has such an extensive selection of fresh and frozen meats. There is also a whole refrigerated section dedicated to pre-marinated meats for quick cooking or grilling. There is also a wonderful selection of fresh made sausages - perfect for any grilled sausage board! The service here is great and the butchers are so friendly and can give you cooking advice too. I don't know what I would do without this butcher shop, but am so glad that they are in the heart of San Diego.
