"The owner-chef discovered an original soup by researching synergistic effects with umami. Blending dashi from chicken, pork, shrimp and shellfish, he created a soup with layer upon layer of umami. His ‘Porcini Soy-sauce Ramen’ features a fragrant paste of porcini mushrooms and black truffles. ‘Salted Yuzu Ramen’ transforms the soup with ginger and spices for a modern sensibility." - Michelin Inspector

Waited 1.5 hrs, but we’ll worth the wait. Got the Michelin winning bowl. Try broth before mixing in truffle for original taste. Duck that went with ramen was very good. Can skip the rice with duck.

One of my top favourite ramen places in Tokyo because of how awesomely clear their broth is. I recommend trying both their signature truffle ramen, named porcini shoyu ramen and their yuzu shio ramen. Both are spectacular and I really enjoyed slurping both ramens especially yuzu shio because I generally prefer it over shoyu broth. We also ordered their pork rice with egg and it was so nicely mixed with some sort of sweet sauce that paired well with everything. Finally we bought their egg sandwich because they look so cute but we were also curious about it because we have never seen a ramen restaurant sell egg sandwiches. I am glad I tried it because it’s slightly different and special from other normal egg sandwiches in Tokyo where they added soy sauce (possibly from their ramen broth) into the egg sandwich. Totally in love with this place and will definitely return! The waiters are also very good at managing the time you spend dining in and politely ask you to leave once you’ve finished your meal to allow other guests waiting in line outside to move along.

Highly recommend to line up one hour before the store open if you wanna visit at night, we arrived at 6:20pm and we were the last guests that are allowed to stay in the line lol (and they sold out! Right after 20 mins from opening time!) We ended up waiting nearly 2 hours but the ramen is definitely worth it, totally feel the mastery and their attitude of making everything perfect, Michelin is the must try! Remember don’t take photo of their kitchen but okay for taking photo of dishes, the staffs are friendly if u also respect their rules :) they even helped us took a group photo !

It is very popular with people queing up to an hour before they open. I arrived 30 minutes prior to dinner and had to wait almost 2 hours before I had my order in front of me. However, despite the wait, the ramen was delicious and flavorful. If you have the time, I recommend giving it a try. Please note that they can sellout before closing time as well.

A good shoyu (soy sauce) based ramen with a generous amount of meat on their side dish bowl. The place only has 10 seats and turn over is a bit slow so expect to wait close to an hour

Queued for an hour from 10am in the morning. The ramen was cooked perfectly. Definitely worth the queue. Their shop is a little small so it will take time for customer turnover.

I’m quite surprised of being asked to finish the meal faster when I was chewing the egg don, while another table spent more time on their 2nd ramen P.S. I ordered more items than other customers… so I required more time

Excellent Noodles, Surprisingly Bad Japanese Hospitality We arrived at the shop at around 6:15 and waited for 90+ minutes in the line before we got in. The noodles were indeed up to standard and packed with flavours. What surprises me was one of the server’s hospitality. After the food arrived for merely 15 minutes, one of the staff came to our table and pointed at a notice on the wall telling customers to be considerate and eat faster. We were actually shocked to be asked to eat faster since we have been eating at normal speed all along and in fact there were two westerners before us who ate for like 30 minutes since they struggled with the chopsticks. After that the server kept standing by our side and basically pressured us to eat faster. Having been to Japan so many times, I really have to admit this is one of the worst Japanese hospitality I have experienced.
