A friend and I visited JaK's Grill on a quiet week night, arriving around 5pm. The place was not busy when we got there, maybe a half dozen patrons. Both of us ordered the Wild Caught King Salmon, which is described on the menu as "Wild caught King Salmon fillet. brined and grilled." Only one word comes to mind when describing what we were served: horrible. I expected a moist flaky and lightly grilled salmon fillet, something that accentuated the fine natural flavor of King salmon. Instead, we both got a tough chewy and thoroughly un-salmony piece of fish. In fact, it tasted like chicken teriyaki without any hint of salmon whatsoever! We spoke to our waiter, who called the maître d', who spoke to the chef, and reported back that the salmon was indeed salmon and was grilled. Not helpful and when we told him it was like teriyaki and not good, no sympathy.
I strongly suspect a few things. First, that the salmon was not fresh. I do know fresh salmon and that was not the case here. Second, it was probably soaked in a sugar and salt brine solution, or, I should say, over soaked and saturated to the point of ruining the nature of the fish. Third, that the salmon, while maybe in fact wild caught, was from the end of the season's run, when the salmon are spent and their flesh is tough. Not the grade of fish I'd've expected at a place like JaK's. In short, we both were extremely disappointed and at $35 for this entree, I felt ripped off and taken.
Yeah, I know. JaK's is a steakhouse, where you go for red meat, but this is Seattle, the Land of Salmon and even Ivar's knows how to do it right. Still, traffic was at a standstill and we were desperate to find a place to eat a comfortable meal, rather than fight traffic. JaK's has a good rep, but if you go there, DO NOT ORDER THE SALMON. If you do, don't say you weren't warned.
